This blend of spontaneously fermented beer is aged on local raspberries. We begin brewing Coolship Red with Pilsner malt, 40% raw wheat, and aged whole-leaf hops. The unfermented wort is then transferred to a large shallow pan called a coolship, which allows the hot wort to mingle with wild yeast and souring microbiota in the Maine air. After fermenting and aging in French oak wine barrels for over two years, we add raspberries and let it rest for an additional four to five months. The finished beer is bright red in color with an aroma of raspberry and oak. Its raspberry-forward flavor is balanced by notes of light funk, apricot, and a tart, dry finish.

Bottle @ Papsø. Thanks. Pours blood with a small pink head on top.Nose is framboise, quite tart and fresh with a layer of horseblanket beneath. Very dry, tasty and fruity flavor with some missing complexity. Ok

slightly cloudy light red, small white head that disappears almost instantly. sweet acid and seemingly slightly artificial berry aroma. probably not at all artificial, but the blend makes me think it smells that way. flavor is primarily sour, add to that slightly sweet red berry flavor. very tasty sour overall flavor, not at all artificial. great sour taste with a sweet tinge.

2012-07-04, corked bottle at Moeder Lambic, Fontainas, courtesy of Jean, bottled 11/04/2010, 5.7% ABV, 8-4-8-4-17=41
It pours a hazy orange-red color, reminiscent of pink grapefruit and grenadine. The aroma is delicate, very interesting, with a first impression of cheesy yeast, then the raspberries, later of wet cellar. Light mouthfeel, dry, with a delicate balance of Lambic and fresh fruits, almost floral, roses; correct final bitterness, with lemony trace and quite strong astringency.
Great.

Cloudy red color. Sour aroma, some fruits (mild) and ass (that’s not cow dung!), like the bigger brother Cerise, but less complex; it gets an average mark, because controversial. Sour flavor, with some cherry and cherry kernel flavor, very astringent in the end. You may like it just because it’s sour, but it has nothing to do with a true Belgian.

Bottle 37,5 cl. Courtesy of madsberg. Pours a cloudy red with no head. Horse manure in the nose - amazing! Medium body, very dry raspberries with loads of Brett and barnyard. Tart but not overly sour. Again amazingly close to a proper Belgian Framboise. 230410

Bottle that was very kindly shared by the Danish contingent at Zythos, Sat 6th March 2010 Pours red, hazy. Good sour cherries on the nose, but there is a lovely woody aroma, its like when sunlight warms up the woodland, difficult to explain but thats what I get. Punchy cherry fruitiness, not too tart, lovley tang, most enjoyable. Many thanks to the Danes for sharing this with me and then letting me finish the bottle off. A8 A3 F7 P4 Ov15 3.7

Hazy orange with a medium pinkish head. Sour aroma with sour raspberries, lacto and woody notes. Flavour was proper sour with sour raspberries, hints of almonds and barnyard. Finished proper sour and dry. Not bad.
