This is a tremendously delicious, textural, and fizzy county ale, bright gold colour, citric and sour, reminiscent of a good champagne or lambic but in a class all its own.
Fantôme – Golden ale, 8% alc. by volume, with a wonderfully musty and characterful aroma. There are many drinkers out there who believe this is the “Nectar of the Gods.” Certainly no other brewer makes beer like this, in Belgium or anywhere. How many beers of 8% plus offer such fresh fruitiness? A solid Belgian saison beer at its base, with an unusual overlay of fruitiness.

750 ml purchased at Hill Farmstead. Orange color, slow steady head. The aroma Aromas of melon pulp, clove, honey, yeast.
Taste is similar to the aroma, sweet honey, old fruit with a hint of tart finish. Light to medium bodied with high carbonation. Overall, yeasty, fruit and mild tartness. Pretty good, I think I liked the aroma more then the actual flavor.

Poured from bottle thanks Airforcehops cloudy yellow gold with a thin white head. Aromas of semi sweet semi tart lemon hint of floral notes and spice. Taste is slightly sweet nectarine lemon hint of lingering tartness.

(750ml bottle from boxbeers.dk shared) Pours a completely opaque pale amber colour with a massive pile of dense off-white foam that has impressive staying power and lots of lace. Aroma is semi-sweet, semi-tart, quite fruity and rather spicy. Notes of citrus, stone fruit, sweet white grape, estery, floral hops, hay, peppery phenolics, and slightly funky earthy yeast. Flavour has a somewhat sweet fruity core with some malt backbone, dried citrus, nectarine, estery, a little earth, floral hops with some hay, moderate peppery phenolics building towards the finish. A little acidity in the back end but just a hint tart, semi-dry with low grassy/spicy bitterness and some light breadiness from the yeast. Medium bodied with effervescent mouth-filling carbonation. No hint of alcohol. A somewhat unique saison with lots of yeast character, solid and quite drinkable.

750ml bottle. Orangey golden colour, white foam head leaving some lacing and floral fruity aroma with apricot and funky yeast. Taste is grains, bread, tart and fruity, apricot, citrus rind, straw, earthy, barnyard, with some grassy bitterness. Foamy mouthfeel, light to medium bodied, spritzy carbonation, dry tangy bitter finish. Nicely drinkable.

My 100th Saison. BB2019. Cloudy orange color with white head. Aroma after opening is citrus and apple funk, smell is more towards wheat and dough, with honey and apricots. Taste is dough, honey, funk, spicy yeasts, some red apples, apricots, spicy finish, slightly warming phenols. Quite minerally as well. But not sour. Dry and rural, but somehow still with a full body. Carbonation is medium, "moussierend". Way too drinkable for 8%. Later pours develop more of a lemon candy funkyness, but it?s still natural. It?s got the undescribable Belgian dirty ruralness that makes the best Saisons. This is beer.8-4-9-5-17Bottle, best before 2007, drunk at our RB Christmas tasting 2016. Lots of moldy cellar aromas, nice spicy Bratapfel flavours. The aroma is meh, but the flavour is very nice! Bottle, best before 2019 again, at the same 2016 Christmas tasting. Much fresher, a bit candy-like. Very drinkable. Not quite as stellar as I remember it.Bottle BB 2020, in November 2017. Lots of orange juice, rather sweet. By far not the best bottle I've had.

[backlog] 22-01-16 / bottle at home, bought in Belgium. Orange colour, a lot of foam. Well carbonated. Fizzy, slight sour. Citrus hay notes. I started rating my beers with Untappd and a few basic notes. Now I want to rate them on ratebeer. So my rating sometimes lack some information. Just ignore it, it is for my personal statistics. Among the best saisons I have tried. Very light bodied and refreshing, floral hops and a bit of barnyard funkiness in the aroma. The taste is very refreshing, slightly citric and floral hoppy.

0,75L bottle (from Koht). Pours hazy amber with whiteish head. The head stays for a long time. Aroma is sweet, fruits, apricots, esthers, spices. Flavor is sweet and bitter, fruits, apricots, medicinal notes, spices, somewhat acidic. Finish is dry bitter. Alcohol is well covered. Overall: well made, but maybe a bit boring.
