Dorothy (1921-1994) was our grandfather’s sister, Hill Farmstead Brewery rests upon the land that was once home to her and her 13 siblings. In her honor, this hoppy Farmstead® ale is crafted from New Zealand and American hops, our distinctive yeast blend and water from our well. Dry hopped, unfiltered, and naturally carbonated, this is the ale that I dream to have shared with Dorothy.

From tap at Mikkeller Bar, Århus. Aroma is grassy hops, bretty funk, saison yeast, citrussy notes, some lemon, touch of apple, mild herbs. Flavour is a bit tartish and above moderate bitter with a very dry finish. Body is medium. Exquisite hoppy Saison, both crisp hoppy and funky.

Pours hazed light gold into a willi. Bright white micro head with excellent retention recedes leaving trailing sheets. Tart apricot and brett aromas. Crisp and tart with sweet apricot, band aid turning to crushed aspirin and grapefruit peel in the dry, lasting finish.
