In keeping with Bavarian tradition (although not intentionally, we only found this out after we’d brewed!) we used 50% malted wheat and 50% barley malt - although we used low-colour Maris Otter instead of the traditional pilsner malt (albeit it has the same EBC colour rating) - but then went and messed it up by adding over 5kg of Columbus and Chinook hops! Returning to tradition we pitched WB-06 German weißbier yeast so things should be interesting...

This brew will be unfined in the Hefeweiß tradition as all the quality wheat beers from Bavaria are unfiltered and full of the flavoursome yeast which gives them so much of their character - try a kristall and see how much flavour the yeast gives! We may take out a proportion of the proteins, but the big dose of Wheat beer yeast will go straight from the fermenter to the cask and then, with no finings, into your glass!

Bottle at Craig’s. Pours golden yellow, nose is light banana and citrus, taste is floral, banana.

Bottle kindly given to me by Gazza whilst he was in London. Pale gold clear, slight haze, thin layer of white bubbles. Attractive citrus hop aroma. Lemon and satsuma aroma. Quite earthy in mouth, some esters, bit of yeastiness. Good hoppy wheat beer. Bit of German style. Quite dirty earthy in the swallow with the hops. More citrus lemon satsuma all way through. Pleasant bitterness that lasts on the finish. Pretty decent fellas. Quite clean in the malts. Tasty citrusy finish is very pleasant especially that finishing bitterness.

Cask-conditioned at the Three Tuns, Bristol 8/8/2012. Slightly hazy gold with a short-lived white head. Aroma of citrus fruits, clove and grassy hops. Flavour had a yeasty edge, with more stone fruits, spices and a dryish finish. Drinkable.
