Our latest brew is just the thing for a cold winter’s day; pale malt and loads of bitter, fruity hops; having secured supplies of luscious Citra and Galaxy and so it seemed a shame not to break into them straight away!
A mash of Weyermann Premium Pilsner, Muntons Wheat and Low-Colour Maris Otter malts gave the fermentables (we do care about such things, despite what some people might say, evidenced by us using the best variety of UK malting barley and top-quality German malt) atop which we laid Crystal and Citra first-wort, Herkules for bittering, then big doses of Citra and Galaxy for aroma and flavour at flame-off. We’ll be dry-hopping in the FV with Super Alpha and in-cask with a 50/50 mix of Citra and Galaxy... oh yes!

Cask, gravity at Merton Winter Beer Festival, 17th & 18th February 2012 Pours hazy light gold with a bubbly white head. Plenty of citrus from the off and whilst it was another very pleasant beer from Steel City (they never really put a foot wrong) the more I drank it the more confusing I found it, maybe I needed to just sit, relax and sup it at a more leisurely pace. Along with the Pictish Claymore, Acorn Northern Brewer IPA and Green Jack Baltic Trader this was amongst the big faves of the weekend. Juicy, fruity with a good dollop of orange and some pithiness, runs to a good dryness at the end. Good beer. A8 A3 T7 P4 Ov15 3.7
