Good head. Malty aroma with plums and orange. Full bodied. Very complex taste with plums, caramel, licorice, coffee, apple and pear. Alcohol present, but well hidden. A bit syrupy. Is this a great beer? Absolutely! Is it a classic? Yes! Buy it whenever you can. But is it worth a top 5 spot? I’m not sure... Westvleteren 8 2005, tasted 06.03.07. Malty aroma, not too abundant. Caramelpudding. Malty, caramelly flavor with hints of cinnamon and clove. Fluid bread, extremely well balanced. (8 4 9 4 16 = 4.1). Westvleteren 8 1993 or 1995, tasted 06.03.07. Malt, porto and a hint of coreander in the aroma. Malty flavor with milk chocolate and caramel. Has become thinner, but still a firm and well balanced beer. (8 4 9 3 16 = 4.0)

Another timely acquisition in Hoorn, NL while traveling there. It gets opened and poured into a bar glass while sharing with a new friend from Chicago. I determined a brown-going-into-black liquid with a small head of light brown. I find a scent of dark fruit and malt. Then on to the first drink, malt, black plum, baked bread, a stated yeastiness and decently bitter at the end. Very good but I prefer the depth of Westy 12.

Bottle, 330 ml, courtesy of kajser27. Shared with JFK10000 and Max. Brown with beige head. Nuts, caramel, sweetish, malty, some fruit notes, medium carbonation. Medium bodied. Tad thin. Very nice.

Deuxième étape de ce périple Westleveren. Et là, nous montons clairement d’un cran que ce soit au niveau équilibre ou aromatique. Et si l’intensité aromatique n’est pas sur cette 8 exceptionnelle, quel équilibre…Tout y est juste, l’équilibre houblon/malt/alcool, l’alliance et la progression aromatique. Cette bière à la fois de l’élégance et du caractère. On ne peut que s’incliner devant un tel savoir-faire. Le visuel est déjà très plaisant avec une bière brune limpide agrémentée d’une mousse brune d’1,5 cm. Le nez montre à la fois une belle complexité et un bon équilibre avec à la fois des notes fruitées (prunes, poires), une pointe de cacao, de candy, un cocktail d’épices (coriandre, gingembre, citronnelle) et un alcool conférant du caractère. On retrouve cet équilibre et ces arômes à la dégustation avec une belle attaque toute en élégance. La deuxième bouche gagne à la fois en ampleur et en chaleur pour une bière à la fois douce par son sucre et racée avec l’alcool. L’arrière bouche est quant à elle davantage positionnée sur l’amertume et sur les épices, permettant un bon contraste. Bonne longueur pour le final avec un alcool qui continue à s’affirmer. Bonne présence en bouche également avec des arômes qui imprègnent le palais. Avec tout cela je n’en ai que plus d’impatience de passer au stade supérieur….
