Bottle: Poured a hazy orangey color ale with a small foamy head with limited retention and almost no lacing. Aroma is somewhat funky and sour and leaves me perplex. Taste is dominated by some wheat malt with some weird funky notes and some sourness. While I usually dig funky and sour beer, this one leaves me a bit confused since the sourness is more apparent to a non-voluntary infection then a planned open-vat infected beer. I used to really like this brewer but the last couple of beers I drank from this brewer left me on my appetite.

75 cL bottle, thanks to Hildigöltur. Pours slight hazy orange with a lacing white head. Quite fruity, apple and more. Low carbonation. Slight citric and acidic. Flavour is again fruity and ends mellow with a slight acidity.

(Bottle 75 cl) Courtesy of Ungstrup. Hazy, pale golden with a tiny, rough, white head. Spicy, slightly tart nose with a whiff of citrus. Fairly light in body with acidic and floral notes and a slightly astringent, sourish finish. 280907

Bottled. An unclear golden beer with a thin off-white head. The aroma is acidic spicy with light notes of grass. The flavor is slightly acidic with notes of spices and grass, leading to a dry spicy finish. I find it a nice saison - though it is listed as a Belgian Ale.

750 ml purchased at Beertopia in Omaha, Nebraska. Opened the cap, and nothing. Oh no! I thought, until I realized there was a cork under there. Right then, on we go. Pour is a slightly hazy orange-yellow with an initially large off white head which fades to about a 1/4 inch head. Aroma is earthy, yeasty and black peppery. The initial taste is really interesting - musty / sour funk that fades to a muted black pepper. There is some tart citric lemon in there as well. All flavors are well balanced and this was quite nice with the Steak au Poivre we made.

Bottle from goldtwins. Fantome never disappoints. Ruddy orange body, medium off-white head. Spicy potpourri nose with pepper and fennel paired with light, sour tart notes. Delicious. Tart, sharp citrus and herbs, strong pepper, fennel. Appley, too. Complex with just the right interplay between the spicy herbal characteristics and the tart, soft body. Very, very nice.

Creamy medium offwhite head. Light chestnut brown body. Light delicate citric, woody herbal aroma. Wonderfully subtle and balanced. Light, old hops. Faintly peppery and metallic. Acidic salty taste, quite hot and spicy. Peppery. Thin-bodied. Light, delicate background. A really weird beer, and not too successful, in my opinion. (0.75l bottle.)

Pepper-ific. Peppery taste, peppery/piny aroma. Really different, some Belgian-y, slightly bretty, barnyard-y, funk. Not strong on the funk though. Peppery bitterness at the end. Very interesting and novel creation from the infamous Fantôme. Perfect mouthfeel, medium carbonation with a nice medium-heavy body for what really is only a alcohol weak brew. Be wary of the pepper. P.S. another great buy at Somerville SuperSaver.8/3/8/4/15
Re-rate: 16 months later and this brew is aging nicely. The pepper is a bit relaxed and there is a bit more of the Fantôme yeast funk with light citric touches. The finishes has gotten so damn dry, especially with the pepper, its like the liquid turns into paper. Its got a nice clear copper color with a strong medium sized head. Of course plenty of sediment at the bottom to murky the beer up with the later pours.8/4/8/4/16.

Many thanks to beastiefan2k for sharing this one - light auburn pour, with the expected Fantome foam - damp, earthy aroma, with hints of sage, and a touch of pine/spruce - a little wheaty/grainy in the flavor, with some herbal tea characteristics, and a very mild sourness - the finish has this unusual swell of pepper, leaving a mild burning sensation on the tongue (almost, but not quite as powerful as Rogue Chipotle), which takes some getting used to - as with most of their beers, even if you don’t love it, you can certainly say that it’s different.

Hazy orange body. Off-white creamy head. Aroma of oranges, spices, liquor, pepper, ... Moderately bitter, lightly sweet initial flavour. Lightly bitter finish. The pity thing is that the nice flavour does not finishes up very well.
