Berliner Braun uses a sour mashing process to force a sour fermentation. A strong lactic and funky fermentation ensues for twenty four hours before the beer is boiled and fermented as normal. This unaged version is tart, sour, and has a corresponding dark fruit malt character. We decided that instead of aging all of it, we will release a small amount of it before it goes into barrels.

50cl bottle at Schouskjelleren, Oslo. Pours clear ruby with a diminishing head. Slightly strange a bit wooden and candy like aroma with sour berries and hints of yeast and some strange stuff. Medium sweet with berries and candy flavours and a decent sourness. Strange thing, but quite tasty and refreshing. --- Beer merged from original tick of Berliner Braun Lager on 29 Jul 2014 at 19:59 - Score: 7

Pours deep amber with a thin fizzy brownish goldenish offwhite head that quickly dissipates without leaving any trace on the glass. Smell is sour and malty with caramel, lemon juice, red wine vinegar, dry soil, purple winegums, unflavoured yoghurt and lemon zest. Taste is tiny sweet, sour and slightly malty with sweet dark bread, caramel, lemon juice, sour milk, moist hay, dry soil, orange zest, raisins and lemon zest. Mouthfeel is round, slightly dry, tart and light to medium bodied. Finish is sour and slightly malty with caramel, lemon juice, sour milk, moist hay, raisins and lemon zest. Weird but it works...

500ml bottle. Ruby red glowing, brown colour with small, rapidly diminishing, completely fading, beige head. Herbal and dark malty aroma, explicit peppercress note, a touch of gherkin; hints of chocolate and Caro Kaffee on the malt side, also a touch of hazelnut. Taste is initially really sourish, hints of lemon juice and lactic acid, later slightly counterweighed by malt residues adding a nuttily touch, remains still slightly astringent and dry; lasting dry nuttily finish with moderate tartness and again hints of peppercress. Light body, narrow, confined. Unusual and interesting combination of flavours, not overly rich and manifold, activating just a small set of sensory receptors.

50cl bottle sampled at the DC Epic Sour Tasting 2014. Pours a hazy, cola brown with some spitty, white head. Nose is interesting, some definite malt, heavy bread crust, some lacto, a little watered down coffee, a hint of vanilla too. Flavor is odd, malt, cracker, bread crust, but all malt flavors are watered down, acid like from a vitamin C tablet, soured rootbeer. Oily finish. Very odd.
