Festive Spruce Ale.We have brewed this special festive ale using malted barley, a variety of high impact specialist hops and hand picked spruce tips which are only ripe for picking during a two week window in the spring. The resiny sweetness of the spruce and malt is countered by a huge hop character, which is just delicious.

(bottle, 100cl) Hazy, almost cloudy, dark amber colour with a massive and tanned foamy head. Mildly toasted malty aroma with resiny, grassy notes of pine needles, as well as fruity notes of citrus and a tinge of caramel. Sweet and delicately bitter flavour, medium bodied at most with a well-carbonated mouthfeel. Mildly toasted (cara-)malt character with resiny and a bit chlorophyll-like sprucy notes, well-combined by fruity hops; sweet and mildly bitter hoppy finish, again with resiny, almost a bit ethereally notes of spruce. I definitely would order a second one. 26.XII.12

Bucket(1000ml): Hazy, amber, big and very lacy off-white head, distinctive aromatic-hoppy and fruity nose, shy woody and port-vinos traces underneath; moderate sweet-bitter flavour, medium bodied, soft; sweet malty finish, supported by a delicate hoppy touch. Well balanced, well drinkable x-mas stuff…

1000ml bottle. Cloudy amber colour with average to huge, frothy, fairly lasting, moderately lacing, beige head. Herbal and hoppy aroma has notes of grapefruit and citrus, resin, honey, spruce. Taste is minimally sweet, has notes of resin, honey, an earthy touch of moss, spruce, hints of citrus; bitter finish. A walk in the wood.

Keg @ Southern, Edinburgh 191212
Golden amber, clear, thin white head
Aroma is very fruity, rich quite intense berry aromas, not a whiff of booze, mellow intense fruits, great aroma
Taste as aroma, getting soft pine but its main very berry fruity, sweet mellow and intense, sweet resinous, not a very complex beer but very nice, some light soft toffee caramel malts in the background
Palate - Medium carb and body. The keg dispense is working here, that bit of fizz stopping it from being cloying. Finish as main flavour, a little dry, touch of bitterness
Overall - Seems to get mixed reviews here. I did like it a lot more than I thought I was going to.

Pours dark orange with a foamy white head. Spicy aroma with herbal notes, caramely malts, notes of ginger. Taste is spicy and malty with herbal and hoppy notes. Herbal and spicy finish with spruce and some off-flavors. Okay, quite spicy ale.
