Toch heeft een Kerstbier iets speciaals en mag er ietsje méér van verwacht worden. Ietsje meer zegt u? Een van de zwaarste densiteiten van het wort: 22°PL. De ambachtelijke brouwzaal kan een grote storting mout verwerken en men brouwt eréén brouwsel per dag, koking in koperen ketel met rechtsreeks gasvuur en afkoeling in het koelschip, ook in koper.
Er wordt enkel bellenhop uit Poperinge gebruikt. Witte kandij mietten zorgen voor de extra densiteit. De afkoeling gebeurt met een Baudelot-koeler en de gisting gebeurt in open koperen gistkuipen. De lagering duurt minimum een maand en het bier is nagegist in de fles.

11.2oz bottle drank in October of 2025. Doesn't gush, but pours with a massive, steady off-white head. Takes awhile to get all the contents in the glass. Great mouthfeel. Bitter hops, but mostly just for balance. Yeast tone is deep, and sort of all over the Belgian spectrum. Aroma isn't that enjoyable to me. Drinks pretty reasonably for the massive ABV. A classic, but feel it is a little different every time I've had it.

Tasted sep3 2025 from tap (crazy)
Cloudy yellow brown with a small white head
Yeast and old sljghtly oxidized hops and subtle fruity notes from. Yeast i think. Flavor is caramelly and yeasty and very complex fruity, parts of the flavors of red and sweet citrus fruits, but not the whole. Abv well hidden and very mellow and rounded compared to a younger stille nacht. Not sure i ever tasted one 14 years old. Certainly not from. Tap

Goudgeel helder bier met mooie stevige schuimkraag.
Aroma is hoppig en fruitig.
Smaak is hoppig en citrusachtig.
Nasmaak is bitter.

330 ml bottle. Pours a dull copper color with moderate foamy head. Aromas of dried fruit, apple pie including the spice, and bready malts. Flavors follow same. Some oxidation showing the age, but otherwise very enjoyable.

330 ml bottle. Pours a dull copper color with light head. Beautiful aromas of florals, citrus, Belgian yeast, stoned fruit and toasted malts. Flavors follow same with additional floral honey and a bit of candi sugar. Absolutely beautiful and in perfect balance. The best young Still Nacht I have tried. And really well priced for such a special beer. Extra points…
