This wonderful wild yeast strain is a slow burner, it likes to hang around and eat everything it can. If it is left to its own devices is will eventually begin to eat the cellulose in the wood of the barrels… What this translates into is a super crisp and fresh double IPA, extremely well-attenuated, allowing all the hop character to come to the fore.

Tap@Taphouse, Copenhagen - golden amber pour with white head. Fruity and malty with heavy brett presence, some fruity notes of grapefruit and lemon, medium body, bretty hoppy finish.

Tap @ Mig & Ølsnedkeren, 8.4%. Clear golden with small off-white head. Aroma is malt, fruit, little brett and a little perfume. Flavour is malt, fruit, little brett, little perfume, medium sweet, caramel, little dry and medium bitter.

Draught @ Mig & Ølsnedkeren. Pours golden with an offwhite head. Aroma of malt, yeast, brett, fruit, light cheese, citrusy, grapefruit. Flavor is light bitter, malt, yeast, bretty, hint of cheese, light wood, citrus, light grapefruit. Medium body, average carbonation, dry and light bitter finish. 240318

Bottle, 330 ml from Že v Redu Primož. Shared with Max and JFK10000. Cloudy golden, medium white head. Fruity, apricot, sweetish, medium+ carbonation. Medium bodied. Some funk.

Light haze on this gold beer, good pale cream colour head. Thin malts. The brett is dominant and slightly bitter, savoury too. A little lemon and orange underneath. Dry savoury bitterish finish. A little more hops please. And then some more hops please.

From tap. Pours cloudy orange with a small white head. Aroma is bretty and slight fruity. Mellow, fruity, slight peachy to citrusy. Estery. Bitter and bretty finish.

Keg at Wild Beer Wapping Wharf. Pours hazy golden orange with a slim white head. Nose is funky barnyard apple skins & doughy yeast. The taste comprises of sweet malts, earth, funk, light citrus. Medium bodied with a soft slightly spritzy mouthfeel. Dry, funky finish. I still rate the 2015 version as the best of the lot
