This cider was aged on pommel lees from the estate. 6 months in tank and 1 year in a bottle due to slow fermentation and formation of bubbles. Marc and François recycle the lees use for making pommeau into for the Baphomet fermentation, giving fine aromas and a slight woodiness (the “dayou” pommeau is aged in cognac barrels for a minimum of 3 years) with extra degrees of alcohol. Great depth, rich in aromas, slightly woody and an intriguing liquorice touch.

Baphomet is a character from the universe of alchemists and occultism (astrology, alchemy, and natural magic). He has 2 tattoos on his arms “solve et coagula” which means solve and assemble.

Bottle, thank you Davido. Nice juicy look, orange, relatively flat. Nose is funky, farmhouse, light bitter edge. Beautiful apple character. Tastes dry, farmhouse but apples still shine. Good Christmas spice thing there almost, amazingly tasty.

Hazy amber color. No head. Big oak, funky yeast, apple skins, dry nose. Very funky and wonderful. Puckering sour dryness, with apple skin and brandy. Slightly heavier mouth feel. Low carbonationNice stuff.

Thanks biirusaikou for sharing the bottle! Poured into a taster showing orange gold with sparse white foam. The nose shows pronounced tart notes of bretty funk, barnyard, and light oak barrel. The palate is light bodied and mildly carbonated. Moderately sweet with flavors of brandy and apple with light notes of barnyard and brett in the background. No tartness; clean and balanced.
