Taking inspiration from Pét-Nat Wines, this beer was naturally carbonated in the bottles and kegs by packaging the beer at the precise right moment before PRIMARY fermentation was complete.

After brewing some wort with a ton of whirlpool hops, we transferred it into our converted wine barrel fermenter on top of the cherries we used for our cherry wild ale to get the rosé color. We dry hopped twice during fermentation, added an enzyme to break down the complex sugars and dry the beer out, and packaged JUST before primary fermentation was complete. This beer finished at 10% ABV and COMPLETELY dry (1.000) Funky, Crisp, sparkling, Lightly Tart, and delicately hoppy. Named after the great documentary about Wayne White.

Bottle shared at Lucky Bamboo. Pours a rose pink gold color with a full 2 fingers of soapy foam. Lovely funky, wet straw and hay aromas with vinous wine and cherry notes as it warms. Bone dry on the palate with cherry and dry muscat. Some oaky vanilla notes, but overall quite dry and tasty. ABV is hidden insanely well.
