We make Wit The Funk with tradition in mind. Brewed with orange peel and coriander and fermented with wit yeast, brettanomyces, and our Terreux house mixed culture. Aged in oak foeders until final maturation, the result is a complex beer that's tart, funky, oaky, citrusy, and super drinkable. Sure, it takes longer, but WTF? It's worth it.

Hazy orange coloured body with a bronze glow and a very thin, single centimetre tall off-white head that fades almost as quickly as soda - but the bubbles on top and activity below, remain quite strong. Aroma of super funky yeast, wheat, grass, fruit, dry malt and oak notes - this one is very fragrant, incredibly funky and pungent in the nose - very nice! Medium-bodied; Strong grassy and dry oaky funk throughout this with a pleasant sweetness from fruit along with a soured brett flavour that dominates, especially at the end with a soft and crisp effervescence that highlights the sweetness and tart notes, almost like a proper gueuze. Aftertaste is complex, deeply enjoyable and incredibly funky with the oak and foeder notes along with the brett and soured yeast front and centre, but the soft sweetness and fruity notes come through at the end, while leaving an easy-to-drink wheat presence throughout. Overall, very nice to sample - this one is clean, crisp, easy-to-drink and best of all - very complex. Great to sample and well worth getting to try this one, if you can find it at all! I sampled this sixteen ounce, pint-sized can purchased from Whole Foods in Arlington (Pentagon City), Virginia on 28-June-2019 for US$3,99 sampled shortly thereafter on 07-July-2019 at home in Washington.

16 ounce can into tulip glass, canned on 1/29/2019. Pours moderately hazy medium golden yellow color with a 1 finger fairly dense and fluffy white head with good retention, that reduces to a thin cap that lingers. Nice spotty soapy lacing clings on the glass, with a fair amount of streaming carbonation. Aromas of big tart/sour lemon, lime, orange, grapefruit, citrus peel/zest, pineapple, peach, pear, melon, apricot, red/green apple, white grape/wine, coriander, peppercorn, oak, hay, straw, grass, wheat, cracker, and white bread; with lighter notes of oaken vanilla, leathery/musty/lacto funk, and yeast/oak earthiness. Damn nice aromas with great balance and complexity of fruity/funky/acidic yeast, spices; moderate pale/wheat malts, and oak notes; with great strength. Taste of big tart/sour lemon, lime, orange, grapefruit, citrus peel/zest, pineapple, peach, pear, melon, apricot, red/green apple, white grape/wine, coriander, peppercorn, oak, hay, straw, grass, wheat, cracker, and white bread; with lighter notes of oaken vanilla, leathery/musty/lacto funk, and yeast/oak earthiness. Light-moderate lactic tart/sourness, Brett tang, and yeast/coriander/oak spiciness on the finish. Lingering notes of tart/sour lemon, lime, orange, grapefruit, citrus peel/zest, pineapple, peach, pear, melon, apricot, red/green apple, white grape/wine, coriander, peppercorn, oak, hay, straw, grass, wheat, cracker, white bread, leathery/musty/lacto funk, and yeast/oak earthiness on the finish for a good bit. Awesome complexity, robustness, and balance of fruity/funky/acidic yeast, spices; moderate pale/wheat malts, and oak flavors; with an awesome malt/tart/tang/sourness, and yeast/oak spiciness balance; with no puckering/astringent flavors after the the finish. Light-moderate increasing dryness from lingering tart/sourness, Brett tang, and yeast/oak spiciness after the finish. Medium-plus carbonation and light-medium body; with a very smooth, moderately creamy/grainy/acidic/tangy, and fairly crisp/sticky/tannic balanced mouthfeel that is fantastic. Zero warming alcohol as expected of 5.4%. Overall this is an outstanding sour witbier. All around awesome complexity, robustness, and balance of fruity/funky/acidic yeast, spices; moderate pale/wheat malts, and oak flavors; very smooth and fairly crisp/refreshing to drink with the modestly acidic/tangy/tannic/drying finish, not overly lactic. Very flavorful and not watery for the ABV. Fantastically well rounded Brett, Bacteria, Witbier yeast complexity, with balanced spices; nice pale/wheat malt backbone against acidity, and overall oak foeder presence. A highly enjoyable offering, and very impressive style example as expected.
