Oude Gueuze is an appellation controlee : its label is protected. It is also known as the champagne of beers, especially as it is only available as a limited edition. Timmermans Oude Gueuze’s special flavour derives from its time-honoured method of preparation. It is a blend of old lambic, which has been aged for three years in wooden barrels, and young lambic which ensures spontaneous fermentation in the bottle. The different lambics are carefully selected by the brewer to obtain a perfect flavour. After it has been produced, Timmermans Oude Gueuze, which is refermented for four months in the bottle, continues to improve for 20 years.

Taste-wise… Discovering the world of the Brettanomyces, the name given to the spontaneously fermenting wild yeast at the heart of the legendary lambics of the Senne Valley, is a fascinating experience. This little marvel of bitter flavour will win you over by its subtlety of taste in which lambic never means sourness. A wild and fresh aroma is combined with a completely emancipated taste from the very first sip, leaving a flavour of authenticity on the palate while maintaining all the mystery of the Brussels gueuzes.

Bottle. Morrisons. Who’d have thought it. Hazed gold. Thick white mousse. Nose has funk and ripe apple tannins. Wheat. Leathery brett. Taste is sweet and wheaty with a tart fruit bretty character. Juicy and foamy. More apple and leathery brett to finish.

Bottle 37.5 corked and caged, brewed 2012, bottled 2015 (bbd 2030), @home poured into a teku glass. Clear deep golden colour, small fizzy white head, disappears within a wink, no lacing. Sour aroma, barnyard, vinegar, slightly sulfuric, sour apples, unripe apricot, woody notes. Full sour and slightly sweet taste, citrus, some vinegar, unripe fruit (green apples, lemon, apricot), woody notes. Medium body, watery texture, average carbonation, sweet and sour aftertaste, some stickiness, very nice.

Bottle 0,375 @Luppolo Station in Rome-Italy. Golden semi filtered a bit bright, medium-low persistent white foam. Nose: peach jam aroma, malty a bit, biscuity, vinous. Mouth: super frizzy sparkling carbonation, sharp and silky citric-sour, fruity.

375ml 2019 bottle from Abeervinum, Rimini, Italy. Pours orange, fairly hazy, with limited white foam. Aroma is intense, with sweat, oxidation, fermented fruits. Body is average, with nice tickling carbonation, and a marked astringency. Taste is intensely sour. Final is fairly short, but still sour.

Strange to see I have not rated this before, had it many times and even visited the brewery. Relatively clear golden body with a small white head. Nice and refreshing aroma, mild acidity, citric fruit, hint of lemon and quite mild funky notes of damp cellar. Taste is mild, refreshing acidic fruit, some apple cider, peach, lemon, sour white berries and light funky. Not the most complex geuze, but the best one from Timmerman and sure a nice and refreshing thirst quencher.

It pours a clear gold with a surprisingly long lasting head of foam and decent lacing.

Very fruity with lemon and apple, light aromas of Brettanomyces. Acetic, yes.

Lemon and apple taste, tart, more emphasis on the Brettanomyces than I got in the smell. Some citrus, light bitterness. Dry finish.

Good mouthfeel.

My first try with this, first time I have seen it, but not my last. Very satisfying.

375ml from Legacy LRS @ home on the day of buying MDX. Appearance: deep hazy golden with a weak white head. Aroma: nice funk and fruitiness with barrel notes. Taste: along the same lines, moderately sour, almost flat. Overall: pretty good.

(Bottle) Golden amber colour with frothy, white head. Fruity, sourish nose with notes of green apples, lemon, grapes, horse blanket, barnyard, a light vinegar touch and funky yeast. Fruity, tart taste with green apples, lemon, grapefruit, sour grapes, unripe pineapple, barnyard, yeast and a generous tartness in the finish. Medium body, dry. Quite clean, but tart, solid and well made traditional gueuze. Very nice.

Odeurs typiques de vieille ferme, de couverture de cheval et de poussière. Olfactif puissant relevant de subtiles notes de pomme verte. Bonne mousse rocailleuse de taille moyenne sur un liquide doré limpide et fortement effervescent. L’entrée de bouche se veut extrêmement citronnée avec des accents de pomme, de poussière et de vieille ferme. Le caractère acidulé est un peu plus que modéré et le blé ne se démarque que très subtilement. Le fruité est assez limité en complexité. Le coté poussiéreux domine l’équilibre. Sèche et acidulée en finale elle présente cependant une effervescence en deçà de la moyenne. Intéressante mais la complexité est en deçà de mes attentes. Redégustée en 2021 (Bouteille 2020) Acidulée et sauvage au nez avec notes de vieille grange, écurie, fruité de pomme verte et de rhubarbe. Mousse énorme, crémeuse et éternelle se maintient sur un liquide doré, légèrement voilé, à l’effervescence volcanique. Fortement acidulée en bouche, elle présente des notes de citron, de pomme verte, assorties de légères notes de miel et de céréales. Le côté acidulé et sauvage est représenté par du crin de cheval, de la poussière et des effluves de vieille grange. Le corps est légèrement ample, la texture légèrement veloutée. Son effervescence est en deçà de la moyenne pour ce type de bière, ce qui rehausse son onctuosité et permet aux saveurs de ressortir amplement. Doucement acidulée, complexe et agréable.
