Oude Gueuze is an appellation controlee : its label is protected. It is also known as the champagne of beers, especially as it is only available as a limited edition. Timmermans Oude Gueuze’s special flavour derives from its time-honoured method of preparation. It is a blend of old lambic, which has been aged for three years in wooden barrels, and young lambic which ensures spontaneous fermentation in the bottle. The different lambics are carefully selected by the brewer to obtain a perfect flavour. After it has been produced, Timmermans Oude Gueuze, which is refermented for four months in the bottle, continues to improve for 20 years.
Taste-wise… Discovering the world of the Brettanomyces, the name given to the spontaneously fermenting wild yeast at the heart of the legendary lambics of the Senne Valley, is a fascinating experience. This little marvel of bitter flavour will win you over by its subtlety of taste in which lambic never means sourness. A wild and fresh aroma is combined with a completely emancipated taste from the very first sip, leaving a flavour of authenticity on the palate while maintaining all the mystery of the Brussels gueuzes.

Bottle from Dekoninck Buizingen. Brewed 2020, bottled 2023, 6.7%, blend of 1 and 3 years old Lambics according to the label. Color: Clear golden, white head. Aroma: Rural funk, hay, tart. Taste: Over moderate to medium tart, a little sweetness also, which most probably will fade away with time but this one definitely is still quite young. Fruity notes of citrus, tart apples. Subtle hay and straw and oak wood. Tannins. Dry to very dry finish. Nice one, easy drinkable, entry-level Geuze that's lacking some complexity.

Poured from 375mL bottle (2008 vintage). Clear-ish gold with minimal white head and a tiny bit of sediment. Nice funk, gentle sweet fruitiness, carbonation gone.

Bottle from Morrisons, Chippenham. Deep gold with a lasting white head. Looks far too fizzy but in the mouth the carbonation is about right. White wine aroma. Very sour but fruity - sour apples with a touch of lemon and some juicy peach. Old dusty cupboards. A touch of woodiness. It's a little harsh but quite pleasant if you sip it slowly.

Solo 750 mL bottle. Pours a clear, golden color, with a small, white head. The aroma is yogurt, lemon zest, hay, pine, and green apple. Dusty and dry, with a juicy sour finish. Light to medium body, musty, and very acidic. Bright, a bit funky, and enjoyable.
