Oude Gueuze is an appellation controlee : its label is protected. It is also known as the champagne of beers, especially as it is only available as a limited edition. Timmermans Oude Gueuze’s special flavour derives from its time-honoured method of preparation. It is a blend of old lambic, which has been aged for three years in wooden barrels, and young lambic which ensures spontaneous fermentation in the bottle. The different lambics are carefully selected by the brewer to obtain a perfect flavour. After it has been produced, Timmermans Oude Gueuze, which is refermented for four months in the bottle, continues to improve for 20 years.
Taste-wise… Discovering the world of the Brettanomyces, the name given to the spontaneously fermenting wild yeast at the heart of the legendary lambics of the Senne Valley, is a fascinating experience. This little marvel of bitter flavour will win you over by its subtlety of taste in which lambic never means sourness. A wild and fresh aroma is combined with a completely emancipated taste from the very first sip, leaving a flavour of authenticity on the palate while maintaining all the mystery of the Brussels gueuzes.

Oldest brewed 2012, bottled 2015. Big pop, lots of carbonation. Huuge sulfuric manure smell at first, quickly vanishes into something apple citrussy. Very citric sour, bit of wood, little funk in the taste. Refreshing, light, needs more funk and less CO2.

375ml bottle watching The Crown. Clear amber appearance. Vibrant wild floral funk. Taste is wild zingy tangy floral funky sour gueue, super crisp super tart. Excellent clarity and depth of flavour. Very good.

Bottle from 2016. Pours almost clear coppery golden with a large frothy white head. Aroma has a lot of green apple up front, light hay, grapes, citrus. Taste is pretty bitter, lightly sweet, lots of pear, green ripe apples, leathery, and a subtle hay-ish finish. Pretty nice gueuze, especially for the price, but nothing very interesting.

Mocno kwasny, nie mocno dziki, ale calkiem sympatycznie ta dziczyzna po 4 latach wychodzi. Ciut octu. Mimo malej ilosci co2 raczej rzeski. Duzo owocowych nut, kwasne jablka, winogrona i limonka w uscie. Moze nieco mniej zlozony od klasyki, ale ryli bdb+

On keg at the Hanging Bat. Not previously rated which is hard to believe. Appearance - deep amber. Decent head. Nose - lanolin and light wood. Taste - sour apple and general funkiness. Subtle wood again. Palate - tangy and sour from start to finish but it has a lovely elegance. Overall - great stuff.

Corked bottle opens without help when the cage is removed with a loud bang. Blonde, pours a huge head. Too much young lambic maybe? Citrus, leather and onions in the aroma. Sour flavor with lots of citrus. Very pleasant and easy to drink oude geuze.
