Our sour cherries, which are certified organic, come from Turkey. The fruit is blended with lambic that is on average 20 months old, the proportion being 200 g of fruit per litre of beer. Since sour cherries have a very pronounced taste it is necessary to select a lambic that has enough character so that it will be a good match for the fruit. After soaking for two to three months, the lambic has extracted the full colours, fragrances and flavours of the sour cherries. At that point it is blended with one-year-old lambic, which contributes the sugars necessary for secondary fermentation in the bottle.

We only use fresh fruit and, as is the case for wine, Cantillon beers can be referred to in terms of vintages. Prevailing weather conditions have a major impact on the ripeness and quality of the fruit, and this is why the taste of the brewery’s fruit-based beers will differ slightly from one year to the next.

Big bottle, all to myself. Lovely stuff. Lots of cherry fruitiness and a lovely sourness. Nice and spritzy. I didn't make any notes. --- Beer merged from original tick of Kriek on 09 Sep 2019 at 16:05 - Score: Appearance - 8 | Aroma - 9 | Flavor - 9 | Texture - 8 | Overall - 9. pink foam, color cherry red with some brown tones. Aroma: oak with some cherry. For a Cantillon beer not too sour. Dry taste with some cherry fruit. Very long sour cherry finish. 1994 version, tasted 08-04-05. Pink color. Cork and wood in the aroma, with just a bit of cherry. Tart flavor with the remains of cherries. Hints of oak. The fruity flavor has gone for the most as years passed by. The color has also faded. Past its peak, still very much drinkable. 7 4 8 4 15 = 3.8. The original rating is for a fresh bottle. 2001 version, tasted 15.07.06. Reddish pink color. Aroma has fresh cheese, oak and cherry. Sour flavor with some cherry fruit sweetness. Fresh cheese, yoghurt and oak. Just a hint of cork. The sourness overpowers the other flavors, that have developed over the 5 years in the bottle. Great beer, of which i prefer the aroma above the flavor (9 3 8 4 16 = 4.0)

Bright red colour with no head. Aroma and flavour have cherry sweetness and a dry woody tartness. Not bad for a cherry beer
