Our sour cherries, which are certified organic, come from Turkey. The fruit is blended with lambic that is on average 20 months old, the proportion being 200 g of fruit per litre of beer. Since sour cherries have a very pronounced taste it is necessary to select a lambic that has enough character so that it will be a good match for the fruit. After soaking for two to three months, the lambic has extracted the full colours, fragrances and flavours of the sour cherries. At that point it is blended with one-year-old lambic, which contributes the sugars necessary for secondary fermentation in the bottle.

We only use fresh fruit and, as is the case for wine, Cantillon beers can be referred to in terms of vintages. Prevailing weather conditions have a major impact on the ripeness and quality of the fruit, and this is why the taste of the brewery’s fruit-based beers will differ slightly from one year to the next.

Bottle from Etre Bright brick red color with a light opaqueness and a good sized white head with a hint of pink in it. Solid earthy funk and lemony lactic tartness with huge cherry aroma flavor and tartness to round it out. This beer is beautiful I wish it were more available.

Bottle 37.5cl cork and crown cap, bottle date 6/7/2021 @home poured into a tumbler. Clear cherry red colour, small shortlived fizzy pink head. Rich aroma sour cherries, marzipan, light wood, cinnamon notes. Taste sweet and sour, sour cherries, marzipan, cinnamon notes, wood. Medium body, sticky texture, lively carbonation, fruity sweet and sour aftertaste, woody notes, some marzipan and cinnamon, well-balanced, still very young but nevertheless very good.

26/9/2022. Tap at Zwanze 2022 at the Free Trade Inn, Newcastle. Pours almost clear reddish brown with a small off-white to pink bubbly/frothy ring. Aroma is quite sweet cherries, with acidic vinegar sours. Nicely balanced sweetness and sours. Dry finish. Very nice.

0,375l bottle at home. BB 26.06.2017. redish brown color, rather big white head. smells of berry notes, marzipan, bit funky, slight oak, bit acidic. nice smell. full body, bubbly carbonation. tastes of cherries, earthy, bit lactic, bit leathery, some marzipan, funk, citrus. finishes rather dry and medium sour with notes of cherries, citrus and some leathery notes. nice one overall, for me a bit too bubbly, rather on the dry side. not very cherry forward, more on the leathery side. good overall.

Bottled 19 May 2021. Exactly as it should be. Big tart cherries are very present up front, dry, mild funk.
