Our sour cherries, which are certified organic, come from Turkey. The fruit is blended with lambic that is on average 20 months old, the proportion being 200 g of fruit per litre of beer. Since sour cherries have a very pronounced taste it is necessary to select a lambic that has enough character so that it will be a good match for the fruit. After soaking for two to three months, the lambic has extracted the full colours, fragrances and flavours of the sour cherries. At that point it is blended with one-year-old lambic, which contributes the sugars necessary for secondary fermentation in the bottle.
We only use fresh fruit and, as is the case for wine, Cantillon beers can be referred to in terms of vintages. Prevailing weather conditions have a major impact on the ripeness and quality of the fruit, and this is why the taste of the brewery’s fruit-based beers will differ slightly from one year to the next.

Butekowanie 7 stycznia. Sporo slodyczy jeszcze. Ale wisnie fajne, skorkowe takie, swieze. Dzikosci niewiele. Niemniej chyba fajniejszy niz srednia jego ;)

375ml bottle (2020 vintage) online from Drikbeer DK. Pours lightly hazed cherry red with a pink white head. Aroma: tart sour cherries with a smidge of funk. Taste: fresh, more light tart sour cherries along with that almondy marzipan note from cherry pits. Medium body, fizzy carbonation, dry fruity finish. Such a superb beer fresh!

F: big, off-pink, average retention.
C: burgundy dark red, light hazy.
A: sour cherries, woody, brett, bit cheese, basement, red fruits, raspberries vinegar, bit strawberries.
T: milk sour cherries, brett, woody, cellar, red fruits, bit lemon and mild vinegar acidity, not very offensive sourness, quite nice, classic for the style, medium body and lively carbonation, refreshing, fully enjoyed.

From bottle to glass. fresh ripe cherry. Faint must in the background. Slightly hazy burgundy with rose head that lingers as a collar. Flavor is bing cherry. Effervescent. Slight tart.

Draft at Le Grincheux. Hazy deep ruby with pink head. Massive sweet and sour cherry, almonds, light funk and hay, oak. Medium sweet and sour, light bbn bitter. Over medium bodied with sparkly carbonation. Really a lot of fresh cherry in here, I don't think I've actually had this from draft before, really a treat!
