Our sour cherries, which are certified organic, come from Turkey. The fruit is blended with lambic that is on average 20 months old, the proportion being 200 g of fruit per litre of beer. Since sour cherries have a very pronounced taste it is necessary to select a lambic that has enough character so that it will be a good match for the fruit. After soaking for two to three months, the lambic has extracted the full colours, fragrances and flavours of the sour cherries. At that point it is blended with one-year-old lambic, which contributes the sugars necessary for secondary fermentation in the bottle.

We only use fresh fruit and, as is the case for wine, Cantillon beers can be referred to in terms of vintages. Prevailing weather conditions have a major impact on the ripeness and quality of the fruit, and this is why the taste of the brewery’s fruit-based beers will differ slightly from one year to the next.

(re)sampled at the end of 2020. This particular batch was bottled 18th of June 2015. must have had it numerous times before, but I never really kept track of batches.
Pours clear, lighter red than fresh batches , more like a clear pinkamber-orange red. No real head, whatever is there in the pour, immidiatly dissapears. Scent is be-a-utifull. Aged Cantillon funk, mild cork, but not problematic at all . mild cherry. Taste is very full, midly oxidized (marzepin) cherry still very clearly present. Cantillon funk, in a beautifull way. Acidic bite upon entering the mouth, giving way to a fruity character I'd still call a blast. lambic funk, presenting a mild oxidative note (aged wood ) near the end finishes of the main taste. It lingers in it's beautifully complex acidic character. Mild cork, still, but never problematic. Creating imperfections we all love in this type of beer. The body still is medium, so is carbonation. I'd strongly prefer this over a fresh one, and will probably aim to age the more freshly bought bottles just as long.

Season 19/20 , nie będę się rozpisywał ponieważ to ikona stylu, wiadomo czego szukać i co oferuje. Aromat intensywny, ładnie się otwiera, ponadto wyczuwalne nuty różane, bardzo smaczne.

Cherry fruity nose. Tart, cherries abd a fruity, sour-vineous taste. Classic, no nonsense.

Bottle at home, almost 5 years old. Cork in really good shape. Clear ruby with big but short lasting pink head. Still quite some sour cherries but also earthy funk, wood and soft minerals. Over medium sour and light sweet. Very fine fizzy bubbles. Maybe a tad sour, but a lovely beer and not too much age going on yet after 5 years.

Butekowanie 7 stycznia. Sporo slodyczy jeszcze. Ale wisnie fajne, skorkowe takie, swieze. Dzikosci niewiele. Niemniej chyba fajniejszy niz srednia jego ;)
