Das Wasser aus eigenem Tiefbrunnen, die speziell obergärige Hefe aus eigener Reinzucht, ausgesuchte Malzsorten und eine ausbalancierte Mischung von Bitter- und Aromahopfen:
Wenn man jetzt noch Dombraumeister wäre, wüsste man, wie sich aus diesen Zutaten ein unvergleichlich süffiges Kölsch kreieren lässt. Aber das bleibt natürlich unser Geheimnis.

0.5l bottle. Clear pale yellow body, white head. Aroma of bread, grains and a hint of peaches. Taste of bread and some floral hops. OK kölsch.

From a bottle, Cologne, May 2013. Yellow and lacing head. crisp and a mild hint of hops. Malt flavor and smooth palate. Even thought I had it from the bottle, I thought this one was solid, to the extent one kolsch is any different from another.

Tap at Dom Im Stapelhaus, Koln, 26/04/13. Clear pale golden with a good sized white head. Nose is pale malts, grass, light summer fruits. Taste follows. Medium bodied, fine carbonation, crisp finish. Average kolsch.

0.5L bottle at home, Clear golden beer with a white foam head that disappears quickly, slightly more bitter than other Kölsch i have had, but definitely not a bad one.

Draft in Cologne. Pours clear golden with a white head. Aroma of citrus, light malt and light hops. Flavour is light to moderate sweet and light bitter. Light to medium bodied with moderate carbonation.

Bottle from Asao in Kyoto. It poured a light straw gold with a thick white head which quickly dissipated leaving behind some decent lacing. The aroma is mild and the taste was grassy with hay notes, some mild hop notes. It is a nice mild beer but would be best on a hot summer day, a kolsch in mid-winter when it is about 0C is not a good match. I’ll try it again when this summer I think... Ok but not great.

Clear golden pour with a white head. Smells of hay and bready malt. A solid beer, nothing exciting.

Draught @ Dom, Cologne. Pours clear golden with a small white head. A bit of metal and grain. A bit of hay. Bland and industrial like.

On draught at the brauhaus. This Kölsch is a clear yellow-gold color with a medium white head that diminishes steadily Rings of lacing on the glass. Bready malt, mild hops and fruit in the nose. Light body with flavors of sweet malt, herbal hops and fruit. The finish is malty with a lingering sweetness in the aftertaste. Pretty average overall.
