Das Wasser aus eigenem Tiefbrunnen, die speziell obergärige Hefe aus eigener Reinzucht, ausgesuchte Malzsorten und eine ausbalancierte Mischung von Bitter- und Aromahopfen:
Wenn man jetzt noch Dombraumeister wäre, wüsste man, wie sich aus diesen Zutaten ein unvergleichlich süffiges Kölsch kreieren lässt. Aber das bleibt natürlich unser Geheimnis.

Big offwhite lasting head. Yellow body with light carbonation. Delicate straw and apple aroma. Dryish straw and malt taste with rubbery apple notes. Chalky mouthfeel. Medium body. Dry aftertaste with pronounced rubber taste. Decent, but no more. (0.33l bottle, Bishop’s Arms, Göteborg.)

The bottle looks good, the beer in the glass also. Aroma a little bit dusty and dry. Flavor modest sourish, finish too dry. Only an average kölsch.

A light golden beer with a thick white head. Aroma of light malt, much more adjunct like and mineral. In mouth, a grainy malt, with rather metallic hops and a bit cloying. Bought at Marhun, Darmstadt, Oct. 20 2007, 0.80E.

On tap at Berliner Bierfestival. Clear, pale golden body, topped by a white head that I would like bigger. The nose is a bit weak, but pleasant, with a nice fruityness, hops and grain. It has a nice fruityness to balance the grain in the flavor, and there’s also a little sweetness. Medium body. Sweet, grainy finish that I would like just a little bitterness in. Nice one. (070803)

Very fine & dense, lacey head, just off-white over metallic golden ale. Dusty, dried hops nose, slightly sharpish, like certain leaves as birch or poplar. Fresh-smelling. Grassy, and quite almondy flavour, and a slightly herbal taste. Broad-leaved parsley or even chervil. Light bodied, slick as grist slickness. A pretty good Kölsch for a bottled commercial product.

Pours a very light clear gold with a large rocky white head. Aroma is hops citrus, hay, malt, and sour. Palate is thin with little carbonation. Flavor is prety decent, but light. Light sour citrus, some malt and a touch of skunk. Not really worth a second try, but I wouldn’t say it’s bad.

Bottle. Clear yellow / golden color with a small white head. Aroma is malty with some fuitness. Flavor is sweet with some notes of fruit and citrus. But easy drinkable.

Bottle, 4.8%. Bready aroma. Yellow colour. Bready flavour, quite boring. 10 months past BB date, which of course is not fair to a Kölsch.

Bottle. Clear golden colour with a large longlasting white head. Malty aroma with some grassy hints. Some hoppy citrus hints. Sweet malty with some grassy and bready hints. Dry malty finish with some bitterness.

An orange beer with a disappearing white head. The aroma is sweet malty with medium notes of straw, and lesser notes of cardboard. The flavor is sweet malty combined with a note of cardboard and light notes of hops, leading to a dry end.
