This Ancient Ale proves that beside the wine on every Italian's dinner table, there should also be a place for beer.

To develop the recipe for Birra Etrusca Bronze, Dogfish Head's Sam Calagione traveled to Rome with molecular archaeologist Dr. Pat McGovern. With the help of Birreria Brother Brewers Leo DeVencenzo of Birra del Borgo and Teo Musso of Baladin, they analyzed drinking vessels found in 2,800-year-old Etruscan tombs.

Although Italian historians were a little reluctant to admit it, the team clearly found that the Etruscans had a taste for ale.

"In every part of the process, we go for as much authenticity as we can," Calagione says. "Ingredients are often tough to track down, and there can be financial and logistical challenges, but we really love embracing these risks to bring these beers to market."

The backbone of Birra Etrusca comes from two-row malted barley and an heirloom Italian wheat. Specialty ingredients include hazelnut flour, pomegranates, Italian chestnut honey, Delaware wildflower honey and clover honey. A handful of whole-flower hops are added, but the bulk of the bitterness comes from gentian root and the sarsaparilla-like Ethiopian myrrh resin.

Birra del Borgo and Baladin also will brew a version of Birra Etrusca, and to add complexity and variety, each brewery will ferment its batches with different traditional materials. Dogfish will use bronze, Baladin will use wood, and Birra del Borgo will use terra cotta.

Bottles of Dogfish Head's Etrusca will first be released in December 0f 2012.

A fast dissipating white head on a translucent caramel body. Nose is a treat with zesty fruit, some acidity, caramel, honey and grain. Initial effervescence is so active you can hear it. The taste is a great blend of rich berries, citrus, grapes, orange, spice, honey, apple and cider-like taste and acidity. Caramel is in there aswell. Rich, sweet, but fresh and not cloying. Well blended. Drinking history has never been this good.

Bottle pours out brown topped with fizzy head. Nose is spice some belg yeast notes. Taste is more of the nice spice mix some put fruit malts and belg kick.

Aroma: Malt and caramel. Flavour: Malty sweet with caramel and spices. Aftertaste is sweet. Colour: Amber with an offwhite head.

Bottle. Frothy off-white good mostly lasting head. Amber colour. Moderate malty and hoppy aroma. Moderate bitter flavor. Average moderate bitter finish. Oily palate.

Bottle, 8.5%. Clear dark amber with small tan head. Aroma is malt, caramel, spices, herbs and honey. Flavour is malt, caramel, spices, herbs, honey, little over carbonated, sweet, little sour, little citric, little dry, notes of alcohol and a little bitter.

Bottle thanks to cgarvieuk dregs run. Appearance - deep amber with some head. Nose - orange and light red fruits Taste - more oranges and red cherries. Palate - close to medium bodied with a creamy texture and a long dry tangy texture. Overall - interesting and decent.

Bottle at Craigs. Thanks to the SF brother in law. Pours clear amber with a thin white head. Aromas of honey, bread, dried fruit. Taste is clean, malty, dried fruit. Clean finish.
