Dernière volonté (French for "Last Will") is a mix of Belgian and English brewing traditions. Complex flavours of hop flowers and spicy, fruity esters from our belgian yeast are perfectly balanced with the robust flavours and aromas of malt. The finish is commandeered by an assertive aroma from dry-hopping.

clear golden pour, good amount of white head. Great aroma if hops, belgian yeast, and citrus with a touch of banana. Flavour is very fruity, lots of citrus from the hops, and a touch of spice. Insanely drinkable, just a top notch amazing belgian ale!

Canadian 'wild' tripel, bottle at Moeder Lambic Fontainas. Tightly cobweb-lacing, moussy and foamy, snow white head, initially as good as clear, warm and deep golden blonde robe with lively sparkling, misty with sediment. Aroma of overripe yellow plums, sweet red apple soaking in molten butter, gooseberry yoghurt, sweat, soggy white bread, honey, feta, old stale orange juice, goat cheese, wodka, vanilla. Fruiy, estery onset, ripe pear, gooseberry jam and starfruit notes, sweet with a sourish edge, creamy body coarsened initially by very sharp, numbing carbonation; pleasantly rounded, doughy, malt sweet middle, bit buttery with a thin layer of honeyish sweetness on top, shifting towards a long, leafy, earthy and cheesy hop bitter finish, peppery with hayish and leathery Brettanomyces notes blending in very well, with a dash of warming, gin-like alcohol in the end. The plum and honey sweetish notes as well as the butteriness linger a bit. Pleasant and interesting 'Bretted' Belgian style ale, good balance of sweet, sour and bitter with the sweetness prevailing; should improve and gain more complexity with cellaring.

341ml bottle (thx, Alex M.!). Bottled on 2015-09-25 (lost in inventory, hehe). Three varieties of Dernière Volonté in a row. Pours a hazy golden with a white head. Aroma is fruity, flowery, typical for Belgian beers. Same taste, similar to Belgian Saisons. Good stuff, despite it’s old.

Shared 11.5 oz. bottle. Pours a cloudy gold with a large foamy white head. Aroma is malty with floral elements. Taste is fruit, spice, malt, caramel, yeast, herbs and alcohol. Definitely unique. Not bad.

341ml bottle. Slightly cloudy, golden colour with small to average, thick, frothy, half-way lasting, minimally lacing, white head. Sweet-ish, floral, fruity and slightly spicy aroma, hints of apple purée and speculoos. Taste is caramel malty, minimally floral, slightly spicy and fruity hoppy overtones, apple purée and speculoos again, a peppery touch; lasting bitter hoppy finish.

From old notes. From tap at Copenhagen Beer Celebration 2012. Golden color with white head. Malty and yeasty aroma, spicy, floral and fruity. Sweet and light bitter taste. Medium oily body with soft carbonation.

Bottle. Pours a bit hazy golden, medium white head, nice lacing. Aroma is grassy, floral, honey. Flavor is light sweet, and light bitter, floral, grassy, a bit of pepper, cereal grains, perhaps grains of paradise going on. Medium body, interesting for sure.
