Star Thistle Honey, Cinnamon, Vanilla, Cacao Nibs, Ancho & Guajillo Chili Peppers
Collaboration with Andre Junqueira and Fernanda Lazzari from Morada Brewing (Morada Cia Etílica) in Brazil. Inspired by cacao beverages consumed at Aztec Festivals and Ceremonies. We made a Star Thistle mead fermented to 14% with some nice residual sweetness and added cacao nibs, cinnamon, vanilla beans and a blend of mild Ancho & Guajillo chili peppers to give it an extremely exotic feel.

375ml bottled courtesy of and shared with Meadme. Cuivrée léger, pas de col, le totu huileux doré au verre. Arôme au boquet bien mielleux, cannelle en avant sans être surfait, petite pointe chocolatée, cacao nibs avec un petit bouquet de piments qui reste plutôt discrète et tend à venir devant en avec l'hydromel qui approche temp ambiante. Palais est visqueux alcool perce bien, effet cloying, mielleux généreux ponctué par des notes fines de cacao, l'effet attendu des piments reste discret et seul la cannelle prend plus de place sans être surfaite. Chaleur revient en toute fin quand le tout se réchauffe un peu. Correct mais j'attendais plus des piments avec une sorte de version mielleuse de Hunaphu.
