A full malt barley wine of 13% by volume, which is brewed once a year; fermented with beer and wine yeast.

With L’ensemble we find the limit. Not only the boundary of the maximum possible, because 13% is extremely heavy for a full malt beer. But also the boundary between beer and wine, because to get this amount of alcohol, a part of the fermentation uses wine yeast. Brewing and fermenting this unique beer requires much time and attention. Partly because we make this beer only once a year and comes on the market when it becomes winter season. A perfect companion to the Christmas season! Deliciously warming.

Sample at SBWF 2015. Hazy reddish/brown with a small head. Aroma of dried fruit, caramel, malt and some very light notes of vanilla. Similar taste. The finish was long with well hidden alcohol. A tasty one.

Bottle, BB Nov 2016, large sample. Dark copper color with tiny debris, medium frothy head. Aroma is heavy malty, bready, caramel, molasses, spicy, slight madeira, touch of roast. A bit in between a belgian and american barley wine feel. Medium sweet in taste, fruity, caramel, slight aged notes, slight malty bitterness. After a while big chocolate kicks in. Thick mouthfeel, sirupy, with soft to medium carbonation. Slight alcohol burn, chocolate again. Finishes a bit dry. Decent stuff.

500 ml bottle into snifter, best before 10/2017. Pours fairly crystal clear deep ruby red color with a 2 finger dense light khaki head with great retention, that reduces to a nice cap that lasts. Nice dense foamy lacing clings around the glass, with a large amount of streaming carbonation retaining the cap. Aromas of huge raisin, plum, fig, date, apricot, cherry, apple, caramel, toffee, molasses, toast, brown sugar, leather, tobacco, herbal, light pepper, and yeast/toasted earthiness. Incredible aromas with fantastic complexity and balance of dark/bready malt, fruity/spicy yeast, and earthy hop notes; with great strength. Taste of huge raisin, plum, fig, date, apricot, cherry, apple, caramel, toffee, molasses, toast, brown sugar, leather, tobacco, herbal, pepper, and yeast/toasted earthiness. Fair amount of herbal bitterness/yeast spiciness on the finish; with lingering notes of raisin, plum, fig, date, cherry, apricot, apple, caramel, toffee, toast, molasses, leather, tobacco, light pepper, and herbal/yeast earthiness on the finish for a while. Incredible complexity, robustness, and balance of dark/bready malt, fruity/spicy yeast, and earthy hop flavors; with an awesome malt/yeast/bitterness balance and zero cloying sweetness after the finish. Medium carbonation and medium-full bodied; with a very smooth, creamy, and lightly slick/sticky mouthfeel that is great. Alcohol is very well hidden with only a small warmth lingering after the finish. Overall this is an absolutely incredible Belgian barleywine style. All around fantastic complexity, robustness, and balance of dark/bready malt, fruity/spicy yeast, and earthy hop flavors; and very smooth to sip on for the huge ABV. An insanely amazing offering.
