A full malt barley wine of 13% by volume, which is brewed once a year; fermented with beer and wine yeast.
With L’ensemble we find the limit. Not only the boundary of the maximum possible, because 13% is extremely heavy for a full malt beer. But also the boundary between beer and wine, because to get this amount of alcohol, a part of the fermentation uses wine yeast. Brewing and fermenting this unique beer requires much time and attention. Partly because we make this beer only once a year and comes on the market when it becomes winter season. A perfect companion to the Christmas season! Deliciously warming.

Aroma of malts, caramel, ripe fruits, hops. Flavour is moderate to medium sweet with a dry bitter finish. A little alcohol is noticable in the finish, but drinking this you wouldn’t guess the ABV of 13%, it’s just too easily drinkable for that. Excellent Barleywine.

Bottle, drunk watching roommate vampires on Prime, episode 1. Medium brown, light haze, small head. Very sweet and lightly-buttery, molasses-cookies nose. Flavor is nice, warming but not biting alcohol with flavorful yeast notes. Backed up by a hint of acidity and full bitterness at the tail end, quite well balanced for thirteen percent. Very tasty one.

17 February 2023. At Rose Red, Bruges. Cheers to Anke, mom & dad!
Hazy dark amber, small, off-white head. Aroma of date, candied plum, raisin, pear syrup, caramel, liqueur, green tea, sugared peanut, sweet cherry, cranberry sauce. Taste has very sweet cherry, date & raisin going into a thick malty profile of pear syrup, caramel & brioche, slightly herbal. Peppery & herbal hoppy finish, lending some bitterness against an ongoing sweetness of candied fruit, brown sugar, wet wood and warming liqueur-like alcohol. Full body, syrupy texture, average carbonation. Delightful dessert beer.

Decent quad, not s fully complex as I’d like. Also feels a bit mishandled. But underneath it’s good, not great. Lacking something dark fruity fig-like. Foeders ams
