750 ml bottle into chalice, no bottle dating. Pours lightly hazy orange amber color with a 1-2 finger dense and fluffy off white head with good retention, that reduces to a small cap that lingers. Spotty soapy lacing clings on the glass, with moderate streaming carbonation. Aromas of big peach, pear, apple, apricot, orange, floral, grass, pepper, clove, honey, candi sugar, and earthy yeast spiciness. Damn nice aromas with good balance and complexity of fruity/spicy yeast esters with a moderate malt balance; and good strength. Taste of peach, pear, apple, apricot, orange, floral, grass, pepper, clove, candi sugar, light caramel, bread, and yeast earthiness on the finish. Lingering notes of light fruits, citrus, floral, grass, pepper, clove, candi sugar, light caramel, bread, and yeast earthiness on the finish for a good bit. Very nice balance and complexity of fruity/spicy yeast esters with a moderate malt balance; with a nice sweetness/spiciness balance and no cloying flavors after the finish. Medium carbonation and medium-full bodied; with a slick and lightly syrupy mouthfeel that is good. Alcohol is very well hidden with only a small warming noticed after the finish. Overall this is an excellent Tripel style. All around nice balance and complexity of fruity/spicy yeast esters with candi sugar malts; and very smooth to sip on. Really enjoyed this one.

Pours deep gold with copper core and white head. The aroma has solid notes of lighter than dark fruity esters and decent amount of yeasty spice. The taste has plenty of fruitiness like raisins, prunes and a bit of apples followed by a floral hop note. Not too much else seems to be going on except a pretty solid alcohol presence. Still nice stuff.

Bottle on 03/30/08. Crystal clear golden amber body with a medium creamy off-white head. Sweet belgian malts, hints of candi sugar and light spice. Sweet spice, light clove and hints of banana, light caramel and some belgian spice. Medium-full body with moderately low carbonation. This seems somewhat different from the tap version. Previous rating: 03/29/08 On tap at the brewpub. Very slightly hazy clear pale copper body. Sweet caramel, candi sugar and spice aroma. Sweet fruit flavor with spice, caramel and candi sugar. Slightly astringent. Medium-full body with moderately low carbonation and a somewhat syrupy finish. Probably would be a bit better with a bit less hops. 7/3/7/3/14

750 mL bottle from Whole Foods Charlottesville. Just hit store shelves today! Pours a deep orange color with a thin but frothy and spirited head. Banana estery and yeasty aroma. Tart green apple, citrus, caramel, bubble gum, anise taste. Full bodied and smooth. Nice job... I can’t wait to try this with some age on it.
