TO ØL / PINTA Kwas Alfa 11,5° - czyli piwo żytnie kwaśne - Sour Rye Pale Ale - Sour Sur Żur. Piwo kwaśne (ale nie dzikie!), uwarzone po raz pierwszy 26 marca 2015 r. wspólnie z Tobiasem Emilem Jensenem z duńskiego browaru TO ØL. Brzeczka zakwaszona bakteriami Lactobacillus Helveticus i fermentowana drożdżami US-05. Chmielone nowozelandzką odmianą Green Bullet - także na zimno. Lekkie, intensywnie kwaśne, orzeźwiające. Kwas Alfa to piwo kwaśne - jednak kwaśność pochodzi tylko i wyłącznie od bakterii kwasu mlekowego Lactobacillus, które w sposób zamierzony zostały zaszczepione do brzeczki. Kwas Alfa nie jest piwem dzikim, gdyż nie użyliśmy drożdży Brettanomyces na żadnym etapie produkcji. Kwas Alfa nie jest piwem fermentowanym spontanicznie, gdyż do jego fermentacji i zakwaszenia użyliśmy tylko bakterii kwasu mlekowego oraz drożdży piwowarskich, a nie całej gamy mikroorganizmów znajdujących się w powietrzu i mających swobodny dostęp do przygotowanej brzeczki. Bakterie Lactobacillus Helveticus zaszczepione w Kwasie Alfa, oryginalnie używane są do produkcji serów Ementaler. Stąd w piwie wyczuwalne są nuty lekko orzechowe. Kremowość i charakterystyczny, nieco ziemisty aromat to także zasługa dużej ilości słodu żytniego w zasypie.Kwas Alfa to tzw.single hop - chmielony na wszystkich etapach - dla goryczki, smaku i aromatu oraz na zimno - tylko jedną odmianą - nowozelandzkim Green Bullet. To chmiel podwójnego zastosowania o wyraźnym kwiatowo-owocowym profilu aromatycznym.

Pours a hazy straw yellow color, topped with av average sized whit head, ok retention. Aroma is quite mild, some spices can be felt, coriander perhaps, slightly dusty and a tad grassy. Taste is gentle soury, lemony feel with somewhat sweet fruity finish. Aftertaste is a bit acidic, but again gentle. Mild take on soury ale, didn’t expect it to be that nice. Very drinkable, semi-light. Nice.

W tym piwie nawet aromat jest kwaśny. Nie jest on mocno intensywny, raczej subtelny. W smaku za to bardzo kwaśne, to jedyne co można powiedzieć. Chmieli zbytnio nie czuć. Świetnie orzeźwiające piwo.

Bottle split at the ABC Beers pre Borefts tasting, 24/09/15. Lightly hazed golden with a decent off white covering. Nose is pissy straw, tangy apricot, orange pith, light must. Taste comprises tangerine, citric shreds, light sour notes, damp hay. Medium bodied, fine carbonation, semi drying close. Ok, a very mellow sour, almost like a session IPA with a sharp edge ... needs to choose its direction more firmly!

[9/24/15] Bottle sample at the pre-Borefts tasting at ABC Beers in Den Haag. Thanks everyone who shared bottles! Hazy golden. Aroma of yeast, fruits, and a sewage note. Slightly sourish flavor with fruitiness, yeast. Light to medium-bodied.
