Imperial Porter
Due to our participation in at least a half a dozen collaborations each year, one might perceive Stone as the craft beer equivalent of a beer flitting indiscriminately from one brewery to the next, all the while drawing precious nectar- the expertise and creativity of those institutions’ brewmasters.
Another buzzy operation that gets the same rap is Bluejacket, a new Washington DC-based operation headed by industry veteran and constant collaborator, Megan O’Leary Parisi. But make no mistake, Stone and Bluejacket are intensely selective about the contemporaries we invite into our brewhouses. We look for the same high level of passion and daringness to flip a beer style on its head that we employ on a daily basis. So, when Parisi and Stone brewmaster, Mitch Steele, decided to collaborate, it was essential that they tap a special individual to complete theyr triad of fermentation domination, and they found just that in Tonya Cornett, the brewmaster at Bend, Oregon’s 10 Barrel Brewing Company.
Together, they decided on a sturdy yet velvety base of imperial porter and developed a plan to celebrate the bounty of the environs in which it was produced by harvesting avocado honey, jasmine and calendula flowers (some from our very own Stone Farms) and infusing them into the beer to create something complex and uniquely Southern Californian. Consider it craft cross-pollination at its finest.

Keg at Brewdog Birmingham; dark brown pour with foamy tan head, chocolate aroma, slight lactic sweetness, chocolate, quite thin on the mouthfeel.

Tap at Toronado, San Francisco. Colour is almost black with brownish white head. Aromas and flavours: Smoke, some sweetness and roasted malts.

Bottle. Deep cola brown hued pour with a small tan head that fades. Aromas of dark chocolate, floral, honey, raisins and a sweet herbal note that I cannot place. Flavors are raisins, dark chocolate, leather, lavender, nutty malt, lightly burnt. Slightly thin for a big impy porter, fuller carbonation.

On tap at Payette’s Black Friday event. Strong and bitter porter, black with spare head, hops bitterness prevails in aromand taste. Stronger as it warms. A real winter warmer.

Purchased at Bottles & Cans in Chicago, IL; enjoyed at home on Black Friday while trying to stay in the house. Appearance is pitch black with a creamy off white head that lightly laces to the glass. Aroma is interesting for a porter, definite roasted chocolate notes but it is also light and floral, almost tea like, pretty good. Taste is nice, definite roasted chocolate malt profile, goes down light, surprising for a close to 10% ABV brew. Overall, nice imperial porter, could have done with more chocolate notes, but not a problem as that’s not what this brew is going for.

22oz bottle pours a watery black with some cloudy, white head. Nose of honey comb, a little candle wax, mild herbs. Flavor is peppery, molasses, candle wax, vanilla, honey. Mild, slightly spicy finish. Not bad.

Bottle. Blackish beer with a tan head. Caramel and toffee aroma. Caramel/toffee flavor with light roast, chocolate, and honey. Medium bodied. Light roast/coffee lingers with caramel/toffee, chocolate, and honey.

Sampled from a 22 oz brown bottle this beer poured a black color with brown highlights and a medium sized foamy tan head that faded and left decent lacing. The aroma was toasty with notes of malted milk, vanilla and port wine. The flavor was toasty malts, anise, black pepper, cola and vanilla. Medium length toasty finish. Medium body. Disappointing.

Bottle @ home, courtesy of the good ole rotbox, picked up originally at Supermarket Liquor Foco. Pours a deep brown/black appearance with a lasting dark brown head. Honey, dark fruity, plum, dark chocolate, anise, fairly sweet aroma. Creamy mouth feel. Big honey, floral, plum, dark grape, chocolate flavor. Fairly sweet. Pretty unique with the honey and floral qualities. A bit gummy. I’m not crazy about this but it is kind of a fun beer to taste.

Bomber from The Davis Beer Shoppe. Pours extremely dark ruddy copper - if you hold it against a 200 watt light source. Creamy tan head. Aroma is veg. Not bad veg. I’d even say it was celery. It’s complex. It’s med body, perhaps a bit more. The flavor has a honey background, and it’s sort of strongly floral coffee otherwise. Not getting chocolate. Jasmin is quite apparent. It’s not exactly dry, but there’s so much unusual flavor that it sort of seems dry. Except for that honey thing. Very interesting ale.
