Imperial Porter
Due to our participation in at least a half a dozen collaborations each year, one might perceive Stone as the craft beer equivalent of a beer flitting indiscriminately from one brewery to the next, all the while drawing precious nectar- the expertise and creativity of those institutions’ brewmasters.
Another buzzy operation that gets the same rap is Bluejacket, a new Washington DC-based operation headed by industry veteran and constant collaborator, Megan O’Leary Parisi. But make no mistake, Stone and Bluejacket are intensely selective about the contemporaries we invite into our brewhouses. We look for the same high level of passion and daringness to flip a beer style on its head that we employ on a daily basis. So, when Parisi and Stone brewmaster, Mitch Steele, decided to collaborate, it was essential that they tap a special individual to complete theyr triad of fermentation domination, and they found just that in Tonya Cornett, the brewmaster at Bend, Oregon’s 10 Barrel Brewing Company.
Together, they decided on a sturdy yet velvety base of imperial porter and developed a plan to celebrate the bounty of the environs in which it was produced by harvesting avocado honey, jasmine and calendula flowers (some from our very own Stone Farms) and infusing them into the beer to create something complex and uniquely Southern Californian. Consider it craft cross-pollination at its finest.

Pours ruby tinged black into a snifter. Mocha head with little retention recedes to hug rim. Summer flower and chocolate aromas. Soft with lavender and caramel upfront turning to chocolate in the dry lasting finish.

Interesting. Pours a dark blackish-brown with small, quickly dissipating head. Aroma has some floral notes and some roasted grain as well. Flavor is floral and sweet, almost a little cloying, with roasted grain, coffee, toast, underneath. Finish is bitter.

Bottle. Pours black with a dark brown head that dissipates to the edges. Aroma is mainly full of roasted malts and bitter dark grains with a backing note of flora and jasmine. Flavor starts with roasted malts and dark grain but has a good amount flora and jasmine.

Bomber. Aroma is bready, coffee, licorice, something sweet which I assume is the avocado honey, cinnamon (?). Pours nearly black with red highlights; has a two finger beige head with good retention; leaves a little lace. Taste is mostly sweet with a lightly bitter finish; lingering savoriness. Flavors of licorice, molasses. Velvety texture. Good.

Pour is a black with a nice sized tan head. Aroma is a decent roasted malt with some sweet molasses and a bit of berry. Flavor is decent roasted malt, a bit of sweetness from the honey and a decent char left on the tongue. I never got any jasmine. Decent but nothing really great. A good porter that hides the alcohol well.

22oz bomber pours with a dark mahogany body that supports a mocha colored head of foam. The aroma offers up spicy black licorice, molasses, chocolate, vanilla, boozy bourbon and then boozy heat at the end of the draw. The taste is smooth with slick sweet thick malts, some spicy black licorice, molasses and chocolate. To midway it gets a little nutty, wood like and it then heads into smooth bourbon booze into the finish. There is a lot going on here but it does come together pretty nicely.

Pours dark brown color with tan head. Aromas of roasted malts, chocolate and floral notes. Similar flavors with a hint of smoke. Medium body with average carbonation.

Draft in snifter. Opaque black/brown. Mocha coffee, hints of chocolate-cherry and smoke. Velvety smooth. Very nice. Drinks like a 6% ABV.

Bomber from the Tin Bucket. Pours a dark black with reddish hues around the edges, a medium tan head. A sweet fruity nose, cocoa, and honey. The flavor has loads of what I perceive to be peppers from some reason, bitter chocolates, dark fruit, some vegetable notes, plums are big. Cocoa and dry wood. Pretty good, not very hot, a bit odd.
