Big ears, but no hear. This irony is not lost on us in describing Deaf Stewart, or interpretation of a classic Belgian-style Witbier. Like its nameske, Deaf Stewart is bright, curious, and bone white in color. Its full-flavored tartness belies a modest ABV. Ignorance is bliss, they say, and Deaf Stewart cannot hear critics who mull over our nontraditional use of grains of paradise and zest from homegrown oranges. Instead, with a smile on his face, Deaf Stewart contentedly follows his own silent path.

Bottle: Poured a clear light golden color ale with small foamy head. Aroma of light wheat malt with some tart and funky notes. Taste is also a mix of tart notes with some nice light funky Brett notes with light dry aftertaste with light wheat malt noticeable. Body is about average for style with good carbonation. Refreshing and easily drinkable with just enough complexity.

(Tap sample @ MBCC 2017 Blue Session, Copenhagen) Pours clear yellow with a white head and a little lace. Notes of bright tart citrus and a healthy blanket of funk, zippy salty mineral quality, dry grass, soft white pepper and herbs, yeast, there is some malty sweetness drifting around in there to balance the tartness. Dry finish, yeasty, mineral, some grain of paradise spice vibes, maybe oak? Medium body, fizzy carbonation. Not the most exciting of all SARA beers, it's good and drinkable but lacks the intensity and complexity of their best beers.

[ As Sante Adairius Deaf Stewart ].Clear medium yellow colour with a small, fizzy, fair lacing, mostly diminishing, off-white head. Aroma is moderate malty, pale malt, tart fruit, light horse blanket, light barnyard, yeast, funky. Flavor is moderate sweet and light acidic with a long duration, tart, funky, sour fruit, citric, sweet malt, pale malt. Body is medium, texture is oily to watery, carbonation is soft. Pours hazy golden with a white head. Aroma has notes of malt, citrus, yeast and funk. Taste is light to medium sweet and light bitter with a long slightly dry, yeasty, funky, pepper and citrus finish. Body is medium, texture is thin to oily, carbonation is soft.
