Big ears, but no hear. This irony is not lost on us in describing Deaf Stewart, or interpretation of a classic Belgian-style Witbier. Like its nameske, Deaf Stewart is bright, curious, and bone white in color. Its full-flavored tartness belies a modest ABV. Ignorance is bliss, they say, and Deaf Stewart cannot hear critics who mull over our nontraditional use of grains of paradise and zest from homegrown oranges. Instead, with a smile on his face, Deaf Stewart contentedly follows his own silent path.

A - Slightly hazy nose, mild head that fades fast
S - Nose is white grape, honeycomb, some maple wood and peach skin with a tough of sulphur.
T - Taste is slightly acetic with a touch of wheat, loads of lemon and finish contains melon and kiwi with acidic pineapple.
M - Thin body, slight oily. vinegar light lemon and pineapple at the end.
O - This is a good beer, very good considering the ABV. very tart and refreshing.

Bottle thanks to Lauren. Pours a cloudy yellow with small off white head. The aroma is lemon zest and wheat. Thin mouthfeel with tart lemon, wheat, light dryness. Easy to drink, refreshing, very good.

Poured from a 750mL bottle. Aroma is moderately acidic with a nice citrus note and some medium light grains of paradise character. Moderate wheat note balances out the citrus and spice. Pours a slightly cloudy, very pale yellow with a small, thin, white head that recedes quickly to the edges. Faint lacing and no legs. Flavor had moderate acidity with quite a bit of orange character and some lemon as well. Moderate wheat notes with lighter grains of paradise character. Faint bitterness with a dry finish. Some lingering citrus and spice. Mouthfeel is medium light bodied with light carbonation; this bottle did not carb up very well. Low astringency and low alcohol warmth. Overall the flavor and aroma are very nice but the lack of carbonation hurts it and give it a bit of a chewy mouthfeel. Well balanced acidity with nice orange character and a good, light spice note.
