2017 Keepers Beer #2. An elegant blend of multiple years of spontaniously innoculated and barrel fermented golden wild ale aged in local Gin barrels. This blend was chosen for it's notable complexity, balanced yet characterful barrel notes end emphatic Brettanomyces character. After blending, this was conditioned on local spruce tips hand-picked from our beautiful forests. The tips present a crisp citrus character in addition to the expected presentation of their 'foresty' origins. In the beer, they provide an aroma of freshly macerated blackberries, citrus and spruce to compliment the botanical nature of the Gin barrels. Extensive conditioning in the bottle has provided a vibrant carbonation and a bold funk.
