Empirium is a sour blonde ale that was fermented in oak barrels with a captured wild culture, where it aged 4 months. It was then transferred onto a copious amount of fresh plums and aged in oak for an additional 4 months. Refermented in the keg with brettanomyces.

Bottle shared @ Grote Dorst pre Quintessence share. Pours lighly hazy golden with a small white head. Notes of juniper, citrus, lavender, lightly oaky, subtle plum-like notes, lactic finish.

750mL bottle, pours a cloudy golden with a small white head. Aroma brings out subdued plums, light brett and a touch of oak. Flavour is along the same lines, with tart plums with light acidity, some oak, and finishes on tart, acidic stone fruits. Nicely constructed with an acidic, fruity and lightly tart finish. Very nice.

750ml bottle pours out a hazy straw color topped with a small head. Nose is nice fruit notes barrel funky barnyard and plenty tart sour notes. Taste is more of the nice fruit notes barrels and funky.

Bottle - Lots of sweet funky notes. Cloudy gold with a decent white head. Lots of funk, stone fruit with a bit of an aspirin finish. I get much more peach than plum.

Bottle at Liquid On tap Seattle-USA. Bottle. Cloudy blonde color, white foam lowering quickly. Nose: grapes skin, white wine fermentation, distillation notes. Mouth: lovely, brett mild sweet citric, easy, plumbs are there. ---Rated via Beer Buddy for iPhone

Bottle thanks to Jeremy. Pours a hazy yellow gold with medium frothy white head that lasts. The aroma is plum skin, oak, funky. Thin mouth, tart plum, oak, brett, nice tartness, really nice.

One of the last draft pours at Holy Mountain the day of the release, before it kicked. Lucky me. Semi cloudy peach golden color with a thin fading head. Sour fruit aroma. Flavor is sweet and tart compliments, pluns, but soft, and white grape. Juicy cool, apple finish. Sourness 6/10. Overall, very nice beer.
