"Champagne" style Tripel

As king of all gods, JUPITER will make you feel like royalty. This was our most expensive beer to produce to date. Brewed on 07/17/08 then bottled to undergo our own version of the tradtional methode champenoise process, JUPITER is elegant but so much more flavorful than any Champagne on the market. When the beer world "goes French", waTCH ouT. At release, this beer is almost 1.5 years old. It is distinctive and completely fabulous.
Here’s a quick breakdown of the process:
Brewed as a Belgian-style tripel. Fermented with Belgian and Champagne yeasts. Aged in stainless. Filtered. Injected with sugar and Belgian/Champagne yeasts then hand-bottled and hand-capped with the usual beer crowns. Underwent a secondary fermentation in bottles to create carbonation and a little more alcohol. Turned "bottom up" to begin riddling process: bottles were hand-turned or vibrated on a metal table once a day to encourage the lees [yeast] to settle into the neck of the bottle. Almost a year and a half later, the final process was completed: freeze neck of bottle in dry ice chips, uncap bottle, encourage yeast plug to pop with warm water, dose the bottle with "clear beer" to replace loss -- in our case we used OB6 [Obliteration VI Double IPA], cork and wire-cage the bottle. Hand-label it. SeLL iT.
LOGISTICS LOG:
brewed as a traditional Belgian-style tripel. Fermented with Belgian and Champagne yeasts. aged in stainless tank. bottle-conditioned then underwent the traditional "Champagne" process to create an elegant "bubbly" beer with lots of flavor.

Magnum bottle: Was lucky enough to get this at Midnight Sun during a special tasting. poured golden with huge creamy off white head. Dry fruit aroma. Taste is hoppy grain, lively fruit, with loads of carbonation. Have passed this up in the past because of the price tag, however I was probably wrong to do so. This beer has held up great and only a few bottles remain.

Massive bottle (jeroboam?) thanks to Mike at the Holiday party. What a cool bottle. Pours a clear golden color with a medium white head. Light fruity nose and some yeast. Come across as a sweet fruity mix of pear and lemon, a light bitter hop, dusty, some light oxidation perhaps, grains in the finish. Good.

Appearance: Hazy yellow with a small white head and light lacing
Unfortunately, the rest of my notes for this beer say is "it was nice and tasty" so I guess it was.

Bottle shared at Pilsner Pete’s gathering almost a year ago. Pours clear apricot. Nose of floral citrus, lemon and yeast. Taste of fruit, yeast, juniper, lemon and spices.

@PilsnerPeters Thanks MrChopin-750ml bottle-pours a white head and yellow color. Aroma is light malt, yeast. Taste is light malt, yeast, spice hops.
