750ml bottle from at least 2008. Pours a hazy, burnt orange with a thin, fizzy white head. Nose is interesting, herbs, spices, a little yeast, a little dusty, grassy, lemon. Flavor is tart, lemony, herbal, grassy, yeasty, a little bit of apple, some carrot. Full bodied, tart, lemony finish.

Red amber with a big off-white head. Somewhat weak aroma with spices, herbs and fruit. Sweet and slightly tart, fruity flavour dominated by dried apricot

Bottle. Quite dark and hazy with a small head. Aroma of spices and yeast and some fruits. The taste was dry and better than the aroma, quite refreshing and smooth to drink. Medium body. An interesting funk on this one.

(Bottle, 0.75 l, at the 16th Kerstbierfestival) The beer poured yellow and cloudy. Its head was medium sized and white. Atroma had fruitiness, mild sourness and black pepper. Palate was medium bodied with medium carbonation. Flavours were fruitiness, black pepper, sourness, sweetness and bitterness. Aftertaste was bitter and sour. Tasted like a Fantöme beer should and I like that.

1998 vintage. I enjoyed this at Delilah’s 12th annual Winter Beer Tasting in Chicago, IL. In a way I think this one went bad...mostly vinegar and wild yeast aromas & flavors. Very sour, but in a way as I’ve adapted my palate to appreciate the more sour beers, I kind of enjoyed it.

Bottle: Beautiful bright amber pour with no head. Nose is soft, lightly spicey with cloves and some citrus. Very balanced, as is the flavor. Lightly malty and earthy, followed by some citrus and light yeast. Faintly spicey, but more peppery in the tail than anything else. This bottle was very flat, but it didn’t detract from me enjoying this to any degree.

750 ml corked bottle into Chimay Trappist glass. Aroma is absent until it warms a bit. When it opens up, it still could be more assertive, but what is present is some Brett tangy funk and cinnamon. Pours hazy orange with a long-retaining head. Tons of floaties. Creamy lace. Taste is complex--tangy berries, Brett, and a nice lingering aftertaste. Taste opens up some more flavors as it warms; peppercorn is noticeable. Medium-bodied, high carbonation. Bitchin beer.

Bottle 750ml. @ home.Clear medium red amber color with a large, fizzy, good lacing, mostly lasting, light beige head. Aroma is moderate to heavy malty, roasted, caramel, moderate to heavy yeasty leather - wood, medicine - gauze, horse stable. Flavor is moderate to heavy sweet and bitter with a average to long duration, medicine - gauze. Body is medium, texture is oily, carbonation is soft to lively. [20091128]
