Fantôme’s winter offering, available December through March or so. Brewer Dany Prignon changes his receipes every year, so we can’t so for sure what this year’s beer will be like, but it is sure to please lovers of Dany’s beers.

Dark ruby red, slightly cloudy with almost no head, just fine bubbles. Decent lacing. Wow, lots of funk here. Like Butterfingers bars stored in dirty sweat socks. In a good way. Taste starts with creme brulee and progresses to sour and spice, then ends with a dry finish. Obvious brett and lacto. Great body. A fascinating and unusual brew, unexpected characteristics for a winter beer. I bought two bottles to store, I’ll let you know how it evolves.

750 ml bottle from Cracked Kettle. Pours orange with a orange head. Smells of glüewine and fruits. Tastes of hip berrys and spices. Easy to drink if you don´t want to analyse it!

Bottle. Ap: Really strange looking. Special thick brown-orange colour with a big but short lasting white head. Hazy! Ar: "Glögg"(swedish mulled wine), clove, banana candy, something a little sour, and some funky mushroom thing. Fla: Fruity! Some christmas spices. Some chocolate. Small sourness in finish.Ov: Really fresh! As complex as refreshingly easy to drink.

Bottled (from Cracked Kettle). Amber colour, mediumsized beige head. Aroma is barnyard, lots of spices and herbs. Flavour is spices, yeast, herbs and some hints of caramel. Quite brutal, but balanced. Semidry palate. With yeast in it gets a bit more bready and solid from the spicyness.

Bottled 0,75 l (CK). Chestnut brown color, steady beige head. Strong spicey aroma - very difficult to describe what spices - black pepper and muscot etc. Medium to full-bodied. Sticky malty with red currant juice, black pepper and yeast - some sweetish notes. As always ... interesting Fantome ... not necessary the best beer in the world.

Bottle picked up at Dranken Geers, 6th March 09, consumed 15-03-09 Pours deep reddy brown, touch hazy and with an off white head. Aroma tingly with sourness but also Christmas spices. This is sour in the mouth with nutmeg and cinnamon and maybe a touch of clove perhaps. Its tangy and different but not as nice as some that I’ve had from Fantome. A6 A4 F6 P3 OV13 3.2

75cl bottle bought at Delerium Cafe, Belgium. My 2400th rating. Pours dark golden reddish with a full creamy white head. Nose and taste is earthy, cardemum, cellar, caramel, spices, pepper, fruits and yeast. Full bodied. A fine Fantome!

Bottle, 8%. Citric aroma, slightly rough, might be infected. Muddy brown colour. Tan head, slightly fizzy. The flavour is citric, funky and bretty. Quite malty. With Fantome, I always wonder if it is infected. At least it is drinkable.

75 cL bottle. Pours hazy orange with a huge off-white and slowly collapsing head. dry and citric brett aroma. Citric, dry and yeasty flavoured. Mild malty note with a hint of caramel and mild bitterness mixed with a more intense citric brett note. Dry and fruity brett finish.

Pour is a hazy gold with an average white head. Aroma is super spiced with some yeast and pepper. Flavor is bitter citrus fruit up front then some more pepper and spice follow up. Finish is very herbal and earthy. Its a pretty darn good beer and it actually gets better in all categories the more you have of it.
