Fantôme’s winter offering, available December through March or so. Brewer Dany Prignon changes his receipes every year, so we can’t so for sure what this year’s beer will be like, but it is sure to please lovers of Dany’s beers.

Bottle. Pours with a huge, rocky, white head. Murky yellow body. Small yeast particles floating around. Aroma of funk, grass, barnyard, citrus, spices, honey, and herbal. Taste is very odd, citrus followed by marjoram, followed bit bitterness with a bit of basil too. VERY herbal. Slightly sour in the finish. On the dry side with lively bubbles. This is up there in oddity as Strange Ghost.

750 mL bottle brought to my by my friend Alraomon from Sam’s Quik Shop in Durham. Winter 07-08 version. Hazy peach colored pour shows a medium head that fades to an omnipresent white layer on the beer’s surface. Small floaties. Aroma is yeast, lime, some funkiness and a peppery spiciness. The spice is more pronounced in the taste, with notes of white pepper, dill, cardamon and ginger. Also very noticeable is the yeast along with some subtler citrus, cheesy and caramel notes. Very dry.

Hazy brown with medium beige head. Spicy aroma with cardemum notes. Spicy flavor with malty and tobacco notes.

Pours cloudy light amber with off white head. Aroma is sour, spicy and has a slighy woody smell. Similar flavors with that Fantome taste to it. Medium body with lively carbonation and a dry finish. Very good.

Bottle is undated, but the range of best by years goes from 07-12, but none are checked. Dusty and fruity with sour cherry pits, a little green/tropical plant/floralness. Flavor a touch thin, mildly sour with a lemony citrus component. Somewhat tannic cherry pit twang as well. Moderately refreshing. A touch thin near the finish. Feels over the hill, but still a neat beer in many ways. Cloudy dark orange color. Foamy khaki head, heavy wet lacing.

780ml bottle. 2007 version. This was the bitterest saison I’ve had — which tasted odd for the style. That aside, it was an interesting beer, but not one I’d try again until next year. Appealing appearance, cloudy yellow body with large, frothy white head. Excellent aroma of caramel, cotton candy, hay, straw, flowers and pineapple. The aroma promised a sweet-flavored saison. Instead, it was only light to moderately sweet, moderately acidic and moderately to heavily bitter, especially through the finish. Average carbonation. Medium body.

750 ml bottle. Poured in a chalice. Spice, orange, ginger and honey aromas. Pretty much orange gold color with white mist for head. Medium or better for body. Stiff, creamy carbonation. Flavor is a bit of funk, pale malt, ginger, orange peel or coriander, and a little yeast. It is pretty dry, nearly astringent. Finish is tingly (suggesting ginger) and a bit citrus. Very light, given the 8% and the "hiver", but a thick dark saison wouldn’t be a saison? This is a very good drink, and it is probably good year round.

Bottle. Golden amber beer with a nice whitish head. Malty, yeasty, spicy aroma with a bit of fruitiness. Yeasty flavor, slight spice, earthy flavor with nice esters. A bit of bubblegum and a bit of peach/lemon. Not what I was expecting for a "winter" beer, but nice - seems a bit like an estery triple mixed with a saison. Lingering spice and esters with an earthy touch. Great balance and very nice. Very drinkable.

750 ml bottle courtesy of PhillyBeer2112, enjoyed at my Holiday Mini Tasting. Pour is slightly hazed orange with an off white head. Aroma of the Fantome yeastiness, licorice, black pepper and ginger. Taste is really bright on the tongue, interesting body, full yet super drinkable. The ginger, pepper and yeastiness really shine through on the taste. Also some wood barrel in there as well. Another good one from Fantome.
