Fantôme’s winter offering, available December through March or so. Brewer Dany Prignon changes his receipes every year, so we can’t so for sure what this year’s beer will be like, but it is sure to please lovers of Dany’s beers.

Medium fine-laced white head. Orange body with slight haze. Very harmonic aroma--hard to analyze. Tropical fruit, tobacco, and subtle, light dusty balanced spices. Orange, wood, and pepper. Taste is milky acidic tobacco with tropical fruit notes and chalk. Bitter dandelion aftertaste. Not bad, but it’s possible the bottle was too old. Should re-rate to be sure. (0.75l bottle.)

Pours dark amber into a tulip. Off-white micro head subsides with slight, slick lacing. Pit fruit aromas. Crisp with sour spice and a lasting funky finish.

Bottle: Poured a dirty dark yellow color ale with a small foamy head with minimal retention. Aroma of weird spice mix with some strong Saaz hops. Taste is incredibly dry probably from the mix of spices and hops but doesn’t really excite my taste buds. Body is about average and carbonation is quite low. Not bad but just doesn’t provide the magic that I usually find in Fantome beers.

Hazy orange body, lots of yeast particles. Medium loose beige head. Flowery aroma, with nectar, yeast spiciness (pepper and Apiaceous [caraway?] notes), and apple cider. Big, estery. Slightly tart appley body, heavy on the esters, chalky and peppery, with flower petals, herbs, and a touch of brown sugar. Clove makes an appearance, though this was subtle. Overall on the bitter side, especially in the finish. Not bad.

Bottle at Kerstbierenfestival 2005, Essen, Belgium
Hazy, amber body. Good lace. Fizzy, light brown head. Aroma of grain. Moderately acidic, lightly bitter initial flavour. Lightly acidic, lightly bitter finish, which lasts very long. I find it a weird Christmas beer. I wouldn’t call it a Saison, iI’s rather a mixture between a flemish sour ale and a strong sweet Christmas beer. And it’s not that mixtures of two lovely things are necessarily still lovely. Certainly not the best creation of Danny P. But hey, we love Danny so we can check out every time whether his new brews turn out to be fantastic or not.

(Bottle 75 cl) Beautiful reddish beer, slightly hazy with a decent head. Typical Fantome spicyness although I cannot pinpoint which spices. Some hints of licorice. Nice. 240501

Bottle at the Montreal tasting, 4/17/05. Lovely, light chestnut brown color with some deep tinges of amber and honey. Large off-white head, lasting, lacing and plenty of clumping. Fantastic appearance as always from Fantome. Aroma of cinnamon, rye, allspice, ginger, cardamon, some light sugar, enjoyable Belgian yeast and some light apples/pears dipped in caramel sauce. Flavor begins moderately malty, with notes of earth, dry wood, tree root, cinnamon sticks, fluffy yeast and lightly bitter, almost nutty hops. Gets more tart the more you drink, drying out the palate nicely with its divine Fantome yeastiness. Controlled acidity, though, with earl gray tea, vanilla cream and spices to linger on forever. No alcohol, soft, but tingly carbonation and a medium-full body.

I have only had a few Saisons so I don’t know what to expect from the style yet. This one was far different from the others. I would have called it a gueze. Dark orange with a large off white head. Fruit and yeast aromas. Flavors of yeast and barnyard; light fruit, and sour. Refreshing; seems more like a summer beer. I didn’t notice the alcohol at all. Stay away if you don’t like a sour beer; but I do and this one is great.

Looks like a Caffrey’s when it is poured, but the head just disappears - even though it almost blew a hole in my cealing when it opened itself. The aroma is yeasty and spicy. The flavor is of yeast and cinnamon - especially the cinnamon has been put in, in enormous amounts. This is too much for me.

Bottled. Cloudy orange. Light estery fruit aroma with a touch of menthe. Funky and lively, medium dry with light sparkling moutfeel. Lightly resiny finish with some bitterness. Complex.
