BARRELS #1 & #2: Sour Trappist Wheat Ale.
Double sour barrel aged for over 17 months (6 months in barrel #1 and over 11 months in barrel #2). The base beer is a Wheat Ale primarily fermented with Trappist ale yeast before undergoing secondary spontaneous wild fermentation and aging in the barrel using DESTIHL’s St. Dekkera Reserve process. It has a golden-light amber color, light body and maltiness and low hop bitterness, flavor and aroma. Fruity-ester and funky flavors and aromas are moderate-high with tartness/sourness akin to a green apple and other tart fruit which is achieved from barrel aging with Brettanomyces, Lacto and Pedio.

Draft (labelled Kurs Blanc). Wood, lactic lemon, and wheat malt aroma. Golden yellow with moderate head. Funky sour lemon and mildly bitter herbal flavor. Okay but not very exciting.

Handbottle at Paul’s gathering. Pours cloudy amber. Nose and taste of funk, sour wheat, rye and tart fruit.

Growler thanks to Sarah/Adam! Poured near clear amber with an off-white head that lasted throughout the beer. Aroma had a nice sour raspberry note that was backed by a sweet wheat note. Flavor had more sweet wheat and the sour raspberries that grew through the finish but never got too intense.

Draft @ FoBAB 2009, Chicago,IL. Pours a cloudy dark brown color with a very small off-white head. Has a sour fruity caramel aroma with some weak hints of apple. Sour tart yeasty flavor with hints of caramel and some hints of wood. Has a tart funky yeasty finish with some hints of caramel.
