We used equal parts barley and wheat malt and fermented with ale yeast and a small amount of Brettanomyces. After primary fermentation, we added a large measure of lactobacillus and let the beer naturally acidify for more than 4 months before bottle conditioning with a fresh pitch of Brettanomyces.

750ml shared by Ryan. Unfiltered yellow-tan. Odd, cheesy aroma. The taste is more pleasant. Kind of amateur tasting. Way too yeast forward. One-dimensional. OKish, but needs more depth.

Bottle thanks to Cody. Pours a cloudy yellow with small frothy white head. The aroma is strong lacto, lemon peel, and oak. Thin mouthfeel with light funk, citrus, tart finish. Very good.

Bottle. Pours cloudy lemon. Nose and taste of lemon, light lactose, sour wheat and sour banana peel. Lighter bodied. Mild tartness. Refreshing.
