“Sure, there are oyster stouts, but we are a clam town. Are there any clam beers?”
“Not that I’ve ever heard of.”
“Stout wouldn’t make sense. Let’s make it super pale. We can lean on the stoniness of our water to show the clams.”
“We could salt it like a Gose, the salt would help push the clam idea even further.”
“Nice. How should we hop it?”
“Something very simple but pretty, like Green Bullet.”
“Let’s add something to the boil to make it more like a pot of steamed clams, something like lemongrass.”
“Okay. So a simple ale dressed up with Cherrystone clams with a touch of Green Bullet hops, tied together with lemongrass.”
“It should be cool when it gets nice and hot in July, like a day at a clam shack in a shaker pint.”
Drink Digger because that happened.

16 ounce can. Hazy honey gold pour. Small creamy white head is enduring. Subtle grainy malt nose hints at lemon. Fresh grainy malt flavor is clean and crisp. Noticeable lemony notes. Minerally character in middle. Subtle saltiness as well. Dry bitter finish is subdued.

Draft at Barcade JC, 7/26/15
Hazy light yellowish color with a bright white head and light lace. Lemony aroma. But if wheat and some subtle salinity. Less salty and sour than you might expect. Clean and refreshing. Tingly, lightly dry finish.

The Sampler, Brooklyn tap: Pours hazy yellow with white head. Aroma is barely anything. Maybe a hint of grains or something. Taste is really not that much either. Where is the salt? Where are the clams? Where is the lemongrass? Basically, I got very little of any of this; instead, I got a super light golden ale that if my tastebuds squinted could make out some salt or gose goodness. Disappointed. I normally like Carton too. And, I normally like goses as well.

Keg at Torst - Brooklyn, NYC. Pours clear yellow with a fine, white cream head. Fairly wimpy aroma, some light doughy pale malts, straw. Light sweet flavor, some biscuity pale malts, hints of lemon peel. Light bodie with fine, tingly carbonation. Simple finish, pretty clean, further crispy, biscuity pale malts, minimal bitterness. Basic but very drinkable.

Draft at Torst. Pours yellow with white head. Nose and taste of sea salt, sour wheat, yeast, soft wheat, lemon, see breeze and light banana. Touch of brine. Lighter body. Refreshing.

Tap at Stagshead carton night. Pours hazy yellow with white head. Nose of citrus and wheat. Tastes lovely of light brine, wheat , hops, and plenty of lemongrass. Great summer beer refreshingly salty.
