Created to celebrate Les Caves Bier & Kitchen’s two-year anniversary, this farmhouse ale was brewed with Belgian barley, raw wheat, oats, Mosaic and Citra hops, and open fermented with farmhouse yeast and barreled with fresh organic apricots. We then blended this offering with a portion of each Caves saison brewed since 2012, and our spontaneous blend of beer souring wild yeast and bacteria from our wild mother barrel. Matured ten months, developing notes of farmhouse funk, bright apricots, and tropical fruits with a wonderfully tart finish.

Bottle. Pours a cloudy orange with paperthin off white head that diminishes to nothing. The aroma is strong apricot flesh, oak, citrus. Medium body, stone fruit, oak, light funk, nice tartness, very nice.

Keg at the brewpub in Corvalis, 10/11/14. Murky orange with moderate off white spotting and edgework. Nose is tarte fruit, pissy, musty wood, apple core, tarte lemon rind, funk. Taste comprises tarte peach, apricot, damp hay, vanilla, musty tones, sweet’n’soured fruit peel, funky tunes, light yeast. Medium bodied, fine carbonation, light puckerings in the close. Solid sour, easy to drink and does so well below its ABV.

750mL bottle, pours an opaque cloudy golden with a small white head. Aroma brings out loads of apricots, along with oak. Flavour is quite tart, with notes of sour apricots, medium acidity, and oak. Quite apricoty and acidic, with a decent complexity. Not the most elegant, but white drinkable. Solid stuff.

Bottle. Pours apricot gold white head. Nose/taste of apricot, funky yeast and oak. Soft carbonation. Medium body.
