Most people’s worst of the day during tasting and held off trying until near the end than gave in. Nose is blossoms and sweet honey. Tastes odd you get honey and plastic orange blossom, maybe some mineral quality. A little sweet finish. Not a great one.

Bottle that I’ve had for well over 1 year. Shocked that this is still unrated. (bottle marked 02-118). Carbonated. Big white head while poured, fading in a similar time frame to the average champagne. Bottle has been undisturbed for over 12 months, but still hazy. Medium legs. Honey, citrusy and fresh baked bread aromas. Floral, and almost lightly woody. Apple. Medium sweet aromas with a very mild hint of phenol. Flavors are medium sweet, vinous, candied lemon verbena and mandarin orange. Good floral, vibrant honey character with a near perfect acid balance. Beyond petulant at a medium carbonation that adds life. Well muted alcohol. Very well balanced for a novice meadery, I’m looking forward to trying more of their wines if they are still in business.
