Lightly hazy, copper-amber with deep maize hues and an off-white head that recedes quickly to a ring, as expected for the style.
And as expected in the nose, it’s a full on assault of lactic acid, sourdough and crazy esters/alcohols. Light caramel-like sweetness that you’d expect from a kvass but obviously considerably more sour and funky. This is certainly no commercial, lightly tart, moderately sweet, bread and rye kvass and is much more akin to a mixed fermenation American sour due to the saison yeast and the strong lactobacillus presence. Still, it’s very interesting and retains the spirit of a kvass with all of this crazy bread/dough/rye character. Lemon and caraway are done lightly and provide no overt character of their own but are integrated nicely.
Quite dry, obviously well-attenuated with tons of complex bread/dough/yeast/bacteria funk and rustic qualities. A lemony-lactic-yogurt-like edge to it keeps it crisp and tart on the finish but the beer has a soft texture, nonetheless, and with low but tight carbonation. Very interesting, well-done and while certainly no traditional kvass, a fun sour in the spirit of one.

Growlette taken home and poured into a mug because they said this was considered a kvass.
The appearance was a golden yellow color with a slim transparency about it. Some carbonation was seen rising to hit a quick moving fizzy head. No lace.
The aroma has some citrusy zest popping light sour and tart notes. Sly hay to semi-grass-like features in the background.
The flavor was zesty sour to tart bringing about the hay/grassiness. Zesty citrusy aftertaste roaming into the finish.
The palate was between light and medium bodied with a decent sessionability about it. Carbonation felt alright, perhaps a bit more would have tamed some of the sour harshness penetrating my tongue.
Overall, not a Kvass in any sense of the Russian style. Some weird sort of sour ale that honestly isnt bad to me, but fans of Kvasses. Youll be disappointed with this one.
