Première and Réserve are made in a special technique called "cryo-concentration". They picked the apples very ripe and keep them in a special warehouse in temperature overing +1 C unti the first freezing temperatures of winter. Them they will press them and store the juice in large plastic bins which will be put outside for 3-6 weeks at temperatures overing around -4 to -6 C. This period will see the water separate from the juice. Because water is less dense than sugar it will freeze and the sugary juice will not. They will then collect the super concentrate and super sweet must, about 1/3 of the original quantity, and ferment it. For Première, it will be in stainless steel for 6 months while Réserve will see its must ferment for 8 months, 50% of which in oak barrels (2nd use red wine barrels from US producers).
Première will be filtered and bottled straight away while Réserve will be blended with 50% fresh cider and 50% aged cider and then bottled.

just like their neige cider, but the oak really adds another dimension. You can really tatse the oak, and a touch of vanilla, mixed with the sweet thick apples, and honey, this is intense, and so tasty

Bottle thanks to Jess! Pours deep still clear orange. Aromas of sweet apple cake, light honey-like sweetness, floral notes. Taste has more acidity, sweet apples, honey-like notes, vanilla. Fucking delicious!

Recolte 2007, thanks Julien Huxley! Golden color. Concentrated Apple juice, dominant oak and vanilla in the aroma. Liquorish sweet flavor with Apple, vanilla, peppermint and oak. Full bodied. Complex. Vinous. A delight!

Poured from bottle thanks Willrunforbeer bright gold with orange hues and thick lacing. Aromas of juicy apples oak and hint of vanilla. Taste is luscious balanced sweetness apple vanilla oak and a nice lingering alcohol finish. Stupendous.

Bottle - Reserve 2009 - Cooked sweet nice apples. Clear orange. Very nice, rich sweet cooked apples with almost no acidity. Balanced well and very pleasant.

Rating #8000. Nose brings out toffee, caramelized apples, and bready apple pie. Flavour is wonderfully complex, with notes of caramelized apples, toffee, bready notes, and light oak. Very silky, viscous and warming. Everything is in perfect proportion. The complexity is through the roof. Certainly an elegant ice cider.

2006 Reserva enjoyed with Tommy and others.
A - Dark orange almost a bronze gold. Nice alcohol legs, flat obviously.
S - Has a huge fruity apple and pear with a little bit of clove and prune. Nose is pretty huge with lots of fruit
T - Wow. There is a ton of flavor in this one. It has an almost rotten apple finish. up front I get blueberry, apple, honeysuckle and just loads and loads of apple.
M - Thick, viscous and oily. coats every aspect of the tongue and leaves a lot of sweetness
O - This is a very unique cider. I’d love to get more!

bottle - This golden amber cider has an extra rich, ripe apple aroma. It tastes very sweet with a sharp, tart apple bite and some brown apple undertones. It puts me in mind of very sweet red delicious apples and once gain this cidery delivers a superb cider.
