During the harvest season of 2018, we isolated a strain of lactobacillus off the skins of apples from Dominion Cider's orchards. We then used this bacteria in conjunction with a blend of sacch and brett strains to ferment a simple farmhouse style beer in neutral oak barrels. It was then blended with Dominion's wild fermented cider made from Aurora apples creating a harmonious blend of crispness and funk.

Funk and clean with a touch of apple skin. Cloudy yellow gold with a small white head. Soured clean funk with a dry finish.

Weak white body and no foam, big yeast and funky apple on the nose. Flavour is more good funky apple. Crisp finish. Not bad at all as a cider, a yeasty cider, good in that vein at least.

Very pale, green-grey. Thin head. Aroma combines brett and apples, but also malt so not a sidra. Blend of apple juice and a bit of brett and malt. Nice, actually.

On tap at Twin Sails, pours a hazy blonde with a small white head. Aroma brings out farmhouse yeast, with fermented out honey, and light apple skins. Flavour is complex, with lots of wild yeast, farmhouse funk, and crisp apples. Wild and funky - the cider is wonderfully incorporated. Excellent.

Pale blond colour, cloudy. Dry, thin, mild apple, mild acidity.
Not very complex, but refreshing.

Taster. Appearance: hazy blonde with a weak white head. Aroma: funky with some apple notes. Taste: similar with dry apples notes. Overall: good one, very refreshing, interesting integration.
