This beer is composed of a predominantly pale barley grist, and a combination of fresh hop pellets and whole leaf hops aged for a minimum of three years. All of the ingredients were grown regionally. After a prolonged boil, it was run into our coolship where it cooled naturally, exposed to our native yeast and bacteria, before being transferred to neutral french oak barrels for fermentation and extended aging on the lees. After maturation (an average of 15 months, with barrels pulled from two separate years), it was transferred to tank with a large amount of freshly harvested whole leaf Citra hops, and then transferred again for a heaping secondary helping of freshly picked whole leaf Mosaic hops. This is our first 'fresh hop' beer, and we are excited with the outcome! The Frais shows a bright citrusy acidity and fresh hop character, with mature Brett notes and a vibrant citrus flavor and aroma. The hop character will fade over time as with any beer, so we recommend near-term consumption to best enjoy the fresh hop vibrancy. Should you choose to age it, the hop character will change and diminish, though a more complex yeast character will present itself.

750ml bottle pours out hazy golden topped with a white head. Nose is dank citrus hops brett funky tartness and some oak. Taste is more of the nice dank citrus hops big bretty funk.

09/18, overly bretted, too dry and carby for me, but the Amarillo is nice and fruity on the finish.

Tasting at Erik's, bottle
Cloudy blond colour. Strong aroma, funky, strong manure, who wouldn't like that. Highly carbonated, moderately acidic, it has a good body structure, very strong "poop" flavour, strong funk. Weird, but I like it.

750mL bottle, pours a cloudy golden with a medium white head. Aroma is a bit offensive, with dirty diapers, dry hopping, and some wild yeast. Flavour is a bit more pleasant, with aggressive dry hopping, wild yeast, and tart citrus. A bit harsh, with tart citrus and harsh hopping. Not exactly cohesive, but it's a fun one.

Grapefruit and funky stone fruit. Cloudy gold with a decent white head. Night bright grapefruit acidity and citrus, stone fruit and a dry finish.

750ml bottle at Erik's. Appearance: hazy golden with a white head. Aroma: loads of fruits from dry hopping, some stone fruits. Taste: similar, very dry and carbonated, moderately sour. Overall: ok.

Bottle thanks to Rainer. Pours a cloudy yellow orange with small white head leaving spotty lacing. The aroma is citrus, earth, floral, yeast. Thin body, juicy, melon, lemon zest, floral, nice tartness, light acidity, enjoyed this.

Tap at SARA. Press a touch hazy golden, small off white head, good lacing. Aroma of melons, passionfruit, mango, lime, armpit, oak. Flavor is medium tart, light funk, citrus, odd. Unripe White grape. Medium body. Lingering pucker. Not sure what I think about this one...
